[目的]制备低吸油率面包糠,以有效利用挂面面头,并为改进油炸食品质量提供新源料。[方法]以挂面面头为主要原料,以吸油率为考察指标,在单因素试验的基础上,进行4因素3水平正交试验,优化低吸油率面包糠的制备工艺,并比较分析了不同原料制备的面包糠的感官、吸油率、微观特性。[结果]低吸油率面包糠的适宜制备工艺条件为发酵温度28℃,发酵时间2.5 h,烘烤时间30 min,烘烤温度190℃,此条件下面包糠的吸油率为20.41%。面包糠的显微结构致密度与其吸油率高低密切相关。[结论]以挂面面头和面粉为主要原料制备低吸油率面包糠不仅拓展了挂面面头的应用市场,而且为油炸食品提供了新型的涂膜材料。 展开更多

A novel modeling method which can restore the shape of the femoral head with collapse induced by ischemic necrosis is proposed. First, sequential tomograms of the hip are obtained from a CT scan; secondly, an accurate and automatic method is used to extract the profile of the acetabulum; thirdly, a hybrid method is utilized to gather fiducial marks on the acetabulum; fourthly, bulky error sampling points are removed. Finally, an ellipsoid fitting method is used to fit the ellipsoid model of the femoral head. Two male sufferers with different necrosis extents are chosen as experimental subjects for contrastive simulation. Fifty cases of different ages (from 25 to 79 years old) are utilized for statistical comparisons of matching errors. The prosthetic models highly resemble the primary shape of the femoral head in health. This new method provides not only a theoretical model for accurate operation position fixing in an orthopaedics clinic, but it is also an innovative practical means for the individual manufacture of artificial femoral heads. 展开更多

Extensive quasi-classical trajectories and quantum scattering calculations were carried out to check the convergence of the PES. This PES, fully converged with respect to the fitting procedure and the number of ab initio points, has a very small fitting error, and is much faster on evaluation than the modified Shepard interpolating PES, representing the best available PES for this benchmark polyatomic system. 展开更多

According to the field survey and ^14C dating at Luhuitou, southern Hainan Island, a subsiding area, the authors conclude the high sea level history recorded by coral reef in the Holocene. At least 4 sea level high-stands can be identified from the distribution of coral reef ages: 7300 - 6000 cal.aBP, 4800 - 4700 cal.aBP, 4300 - 4200 cal.aBP and 3100 - 2900 cal.aBP. The highest sea level occurred around 7300 - 6700 cal.aBP, and biological-morphological zones took their shape during the stage. The later coral reefs developed in ponds, depressions, and developed outwards on both sides of Luhuitou peninsula. The modern coral reefs are developing in out reef flat and reef-front slope. Moreover, the time of high sea levels in the northern South China Sea recorded by coral reefs in the Luhuitou peninsula can link up with that in other parts of South China Sea. That means the high sea levels in the South China Sea during the Holocene, which are relative to the warming climate, have the global background. 展开更多

To design a promising Al−Si filler alloy with a relatively low melting-point,good strength and plasticity for the Cu/Al joint,the Cu,Ni,Zr and Er elements were innovatively added to modify the traditional Al−Si eutectic filler.The microstructure and mechanical properties of filler alloys and Cu/Al joints were investigated.The result indicated that the Al−Si−Ni−Cu filler alloys mainly consisted of Al(s,s),Al_(2)(Cu,Ni)and Si(s,s).The Al−10Si−2Ni−6Cu filler alloy exhibited relatively low solidus(521℃)and liquidus(577℃)temperature,good tensile strength(305.8 MPa)and fracture elongation(8.5%).The corresponding Cu/Al joint brazed using Al−10Si−2Ni−6Cu filler was mainly composed of Al_(8)(Mn,Fe)_(2)Si,Al_(2)(Cu,Ni)3,Al(Cu,Ni),Al_(2)(Cu,Ni)and Al(s,s),yielding a shear strength of(90.3±10.7)MPa.The joint strength was further improved to(94.6±2.5)MPa when the joint was brazed using the Al−10Si−2Ni−6Cu−0.2Er−0.2Zr filler alloy.Consequently,the(Cu,Ni,Zr,Er)-modified Al−Si filler alloy was suitable for obtaining high-quality Cu/Al brazed joints. 展开更多

The joints must have sufficient elastic?plastic response and formability levels similar to that of the base metal. In this work, double-sided FSW of AA6061 sheet was compared with its conventional single-sided one. An adjustable tool with different pin lengths (50%?95% of the sheet thickness) was used to perform the double-sided welds. Macro- and micro-structures, strength, and hardness of the joints were investigated to determine the optimum pin penetration depth. The best results were obtained for a double-sided joint made by a pin length equal to 65% of the sheet thickness, which showed an increase of 41% in the ultimate tensile strength compared with the single-sided joint. 展开更多

The static test of 13 square hollow section(SHS) X-joints with different β and different types of plate reinforcement under in-plane moment in brace was carried out. Experimental test schemes, failure modes of specimens, moment-vertical displacement curves, moment-deformation of the chord, and strain strength distribution curves were presented. The effect of β and plate reinforcement types on in-plane flexural property of SHS X-joints was studied. Results show that punching shear of chord face disappears, brace material fracture appears and concave and convex deformation of chord decrease when either collar plates or doubler plates were welded on chord face. Moment-vertical displacement curves of all specimens have obvious elastic, elastic-plastic and plastic stages. As β increases, the in-plane flexural ultimate capacity and initial stiffness of joints of the same plate reinforcement type increase, but ductility of joints decreases. With the same β, the in-plane flexural initial stiffness and ultimate capacity of doubler plate reinforced joints, collar plate reinforced joints, and unreinforced joints decrease progressively. Thickness of reinforcement plate has no obvious effect on in-plane flexural initial stiffness and ultimate capacity of joints. As thickness of reinforcement plate increases, the ductility of reinforced X-joints decreases. The concave and convex deformation of every specimen has good symmetry;as β increases, the yield and ultimate deformation of chord decrease. 展开更多

A new potential energy surface is presented for the triplet state 3At of the chemical reaction S(3P)+H2 from a set of accurate ab initio data. The single point energies are computed using highly correlated complete active space self-consistent-field and multi-reference configuration interaction wave functions with a basis set of aug-cc-pV5Z. We have fitted the full set of energy values using many-body expansion method with an Aguado-Paniagua function. Based on the new potential energy surface, we carry out the time-dependent wave packet scattering calculations over the collision energy range of 0.8-2.2 eV. Both the centrifugalsudden approximation and Coriolis Coupling cross sections are obtained. In addition, the total reaction probabilities are calculated for the reactant H2 initially in the vibrational states v=0-3 (j=0). It is found that initial vibrational excitation enhances the title reaction. 展开更多

The results show that there is a nonlinear relationship between the ratio of Fe-Al compound at the interface and the interfacial shear strength. When the ratio of Fe-Al compound at the interface is smaller than 71.4%, with the increase of the ratio of Fe-Al compound at the interface, the interfacial shear strength increases gradually; when the ratio of Fe-Al compound at the interface is larger than 71.4%, with the increase of the ratio of Fe-Al compound at the interface, the interfacial shear strength decreases continuously; when the ratio of Fe-Al compound at the interface is 71.4%, the largest interfacial shear strength 70.2MPa is obtained. 展开更多

The microstructures of the brazed joints for commercially pure Ti and stainless steel were investigated by the applications of various filler alloys including Ag-, Ti-, Zr- and Ni-based alloys. Generally, the dissimilar joints between Ti and stainless steel were dominated by the Ti-based intermetallic compounds (IMCs), e.g. (Ti, Zr)2(Fe, Ni), TiFe, TiCu, and Ti2(Fe, Ni), due to a significant dissolution of Ti from the base metal. The (Fe-Cr) cr phase was also observed near the stainless steel due to a segregation of Cr into the interface region. This research demonstrates empirically that the brittleness of the Ti and stainless steel joint can not be avoided only by applying single braze alloy or single insert metal, and thus an introduction of additional suitable interlayer between the filler alloy and the base metal is necessary to prevent the brittleness of the joint. 展开更多

Controlling catalytic activities through surface strain engineering remains a hot topic in electrocatalysis studies.Herein,ab initio molecular dynamics(AIMD)simulation associated with free energy sampling technology were performed to study the energetics of the key step of producing C2 products in electrocatalytic reduction of CO or CO_(2),i.e.CO dimerization,on strained Cu(100)with an explicit aqueous solvent model.It is worth mentioning that when compressive strain reaches a certain extent,the surface of Cu(100)will undergo reconstruction.We showed that,from tensile to compressive strain,the free energy barrier of CO dimerization decreased,suggesting that the activity of CO dimerization increases.It was also found that some of the reconstructed surfaces showing the lowest free energy barriers but might be less stable can be stabilized in the presence of adsorbed O or CO.Upon detailed quantitative analysis on the charges of surface Cu atoms,we found that the free energy barriers were strongly correlated with the charge of Cu atoms where the OCCO intermediate adsorbs.When the surfaces structures of Cu(100)were altered under compressive strain,the electronic structure of surface Cu atoms was monitored and thus the activity of electrocatalytic CO dimerization can be tuned. 展开更多

For the tunnel crossing active fault,the damage induced by fault movement is always serious.To solve such a problem,a detailed anti-faulting tunnel design process for Urumqi subway line 2 was introduced,and seven three-dimensional elastic-plastic finite element models were established.The anti-faulting design process included three steps.First,the damage of tunnel lining from different locations of fault rupture surfaces was analyzed.Then,the analysis of the effect on tunnel buried depth was given.Finally,the effect of the disaster mitigation method on the flexible joint was verified and the location of the flexible joint was discussed.The results show that when the properties of surrounding rock at the tunnel bottom grows soft,the tunnel deformation curve is smoother and tunnel damage induced by fault movement is less serious.The vertical displacement change ratio of secondary linings along the tunnel axis may be the main factor to cause shear damage to the tunnel.The interface between the hanging wall and fracture zone is defined as the most adverse fault rupture surface.The tunnel damage was reduced with the decrease in the tunnel buried depth as more energy was dissipated by overburden soil and the differential uplift zone of soil became more diffuse.The method of the flexible joint can reduce the tunnel damage significantly and the disaster mitigation effect of different locations on the flexible joint is different.The tunnel damage is reduced by the greatest degree when the flexible joint is located on the fault rupture surface. 展开更多
