[Method] The components and content of fermentable sugars in wort made from degermed corn extruded at low temperature as be...[Objective] To accurately determine the components and content of fermentable sugars in wort. [Method] The components and content of fermentable sugars in wort made from degermed corn extruded at low temperature as beer adjunct were determined by HPLC. [Result] The contents of sugar components were shown as below: fructose was 3.8 g/L, glucose was 7.4 g/L, sucrose was 4.2 g/L, maltose was 53.8 g/L and maltotriose was 10.6 g/L.The content of the five fermentable sugars had good linear relation within their peak area in the determination range, the correlation coefficient was 0.977 6-0.990 7, the recoveries of samples were >96%, the standard deviation was 1.27%-3.26%. [Conclusion] The method is simple and rapid with high sensitivity and good reproducibility, it provides reliable and accurate analytic method for determining the components of fermentable sugars in wort made from degermed corn extruded at low temperature as beer adjunct.展开更多

[Method] Two na...[Objective] The aim of this study was to observe variations of DON content in grain of two wheat cultivars during tempering at different temperatures, and explore the possible causes of the variations. [Method] Two naturally Fusarium-infested wheat samples Youmai 3 and Yangmai 14 were selected as experimental materials. Tempering was carried out at different temperature (15, 25 and 35 ℃) for 48 h. During tempering, wheat grain samples were collected every 8 h. DON contents in tempered grain were measured by HPLC coupled with UV detector. [Result] For Youmai 3, DON contents were in the ranges of 3.94-12.49, 4.26-6.11 and 3.41- 7.91 μg/g during tempering at 15, 25 and 35 ℃, respectively. The highest DON contents were observed at the 32^nd hour at 15 ℃, the 8^th hour at 25 ℃ and the 32^rd hour at 35 ℃, respectively. After tempering for 48 h, DON contents in grain were increased by 175.1%, 27.5% and 7.2%, respectively. For Yangmai 14, DON contents were in the ranges of 0.55-1.56, 0.39-0.77 and 0.57-3.17 μg/g during tempering at 15, 25 and 35 ℃, respectively. The highest DON contents were ob- served at the 24^th hour at 15 ℃, the 40^th hour at 25 ℃ and the 48^th hour at 35 ℃, respectively. After tempering for 48 h, DON contents in grain were increased by 94.5% at 15 ℃ and 456.1% at 35 ℃, respectively, whereas it was decreased by 35.0% at 25 ℃. From the point of view of reducing DON level, 15 ℃ was not rea- sonable for the tempering of both wheat cultivars, and tempering at 35 ℃ for 16 h and tempering at 25 ℃ for 24 h appeared to be desirable for Youmai 3 and Yang- mai 14, respectively. [Conclusion] The results suggested controlling the tempering temperature and time would be helpful to reduce DON level in grain.展开更多
Fructo-oligosaccharide (FOS) is a type of dietary fiber. It can not be digested by enzymes in the body. It also helps to improve a digestion in the intestine, an excretion system and prevent the cancer. Jerusalem ar...Fructo-oligosaccharide (FOS) is a type of dietary fiber. It can not be digested by enzymes in the body. It also helps to improve a digestion in the intestine, an excretion system and prevent the cancer. Jerusalem artichoke is scanned and analyzed by High Performance Liquid Chromatography (HPLC) for quantity of FOS. They are selected for extraction and drying process. Studies on the extraction for a powder making, the conditions are optimum for maximum yield. Experiments manage using a factorial real 2 × 4 × 6 in 2 blocks of Randomized Complete Block Design (RCBD) models. The first factor studies on two types of solvent. The second factor is the four levels of temperature in the extraction with water at 25 ℃, 35 ℃, 50℃ and 60℃ for 30 min. The third factor is the ratio of sample per solvent as 5, 6, 10, 15, 20 and 30 times. The data and comparison of average is analyzed by Duncan's New Mutiple Range Test at the significant level 0.05. The concentrated extracts are processed to powder by freeze drying, a hot air and vacuum drying. Optimal conditions control the temperature and time by heating in both vacuum and conventional oven. The results of temperature on the extraction are significantly different at a = 0.05. In drying process with high temperature, the color of product is more yellow (b) and less white (L). The difference of color value is statistically significant at level a = 0.05. The sensory evaluation of food products are added the extracted powder and attribute by panelist. High level acceptance of product is aspectual about texture and flavor. FOS is the trend of functional foods for health. It is focus on low energy and on obesity including increasing the absorption of calcium.展开更多
