Therefore, there...Pastry is an essential part of food stuff people like, especially preferring those made of wheat flour: cakes, biscuits, pancakes, etc. The nutritive value of the products mentioned above is not high. Therefore, there is a need to increase it by adding something like doum fruit (Hyphaene thebaica L.), which is a widespread in Upper Egypt. Doum fruit is a rich source of fibers and antioxidants, also other valuable substances such as carbohydrates and minerals especially potassium (K for people suffering from blood pressure problems). This investigation was carried out to study the possibility of utilization doum fruit powder in cake production. Five levels of wheat flour substitution were used 0%, 5%, 10%, 15% and 20% to produce cake. Also, the effects of blends on farinograph parameters were studied. Results indicated that substitution of doum powder (D.P) led to increase the water absorption (%) and dough weakening (B.U), whereas dough stability (min) was decreased. The water holding capacity of blends increased with increasing the level of substitution. The chemical, physical and sensory characteristics of the prepared cakes were studied. Results showed that increasing the levels of substitution increased the total fat, crude fiber and ash contents in produced cake compared with control. Minerals of the produced cake showed an increment in K and Mg, while slightly increment in Ca, Fe and Zn with increasing the level of substitution. Total phenol and antioxidant activity (AO) increased in substituted cake. Physical attributes of the produced cakes were evaluated and results showed that volume of substituted cakes decreased with increasing the level of replacement except for 10% level it increased. Results of textural analysis showed that D.P fiber decreased all the parameters. Concerning cake color, as the percentage of D.P increased, the color of the cake became darker and had high a and b values. The sensory evaluation results showed an insignificantly decrease in the acceptability by increasing the doum powder substitution comparing with control.展开更多

First, an investigation of the...The aim of this study is to investigate the effect of chemical extraction method on the properties of doum palm fibres. The method of extraction which is carried out is a soda treatment. First, an investigation of the extraction processes was undertaken. Secondly, the physical properties (surface morphology, density, linear density and diameter), the mechanical properties (tenacity, strain) and chemical properties (FT-IR spectra) of doum palm fibres were inspected. Finally, a comparison between properties of doum palm fibres and other vegetal ones has been included. Results indicates an influence of soda treatment on properties of Doum palm fibers. In fact, there is an improvement on fibers diameter and linear density while increasing soda concentration, temperature and treatment duration. Moreover, the studied fibers have a low density which does not exceed 1. The fibers tenacity achieved the maximum value of 20.86 cN/Tex when precessing in the following combination (0.75 N, 100°C and 180 mn). In the end, the FTIR spectra reveals a change in structure after this alkali treatment while increasing the cellulose amount exposed on the fiber surface and consequently the number of possible reaction sites (OH groups).展开更多

One of them is doum fruit extract. The study was conducted to evaluate effect of doum fruit extract on some biochemical parameters, including enzyme activities and histopathological changes of pancreas in alloxan induced diabetic rats. Animals were allocated into five groups of rats, two groups, several as control (one normal and one diabetic rats) and the other three groups were induced diabetic with doum extract (0.5, 1 and 2 g/kg b·wt) which were given every other day by stomach tube for 6 weeks. Evaluation was made for glucose, insulin, lipid profile, enzyme activities, antioxidant activity and histopathological changes of pancreas. The results showed that doum fruit extract decreased blood glucose, insulin, total cholesterol (TC), triglyceride (TG), total lipid (TL), low-density lipoprotein cholesterol (LDL-C), lactate dyhadreygenase (LDH), alanine and aspartate amino transferase (ALT, AST), alkaline phosphatase (ALP) and Malondialdehyde (MDA) while plasma catalase activity and high density lipoprotein cholesterol (HDL-C) were significantly (p 0.05) increased. Therefore, the results of this study demonstrated that the active compounds present in the doum extract have a positive effect on the biochemical parameters of diabetic rats.展开更多
The present study was carried out to make new healthy synbiotic flavored fermented skim milk drinks (SFFSD) supplemented with either Doum (Hyphaene thebaica L.) or Carob (Ceratonia siliqua) fruits powder for nutrition...The present study was carried out to make new healthy synbiotic flavored fermented skim milk drinks (SFFSD) supplemented with either Doum (Hyphaene thebaica L.) or Carob (Ceratonia siliqua) fruits powder for nutritional, antioxidant and antimicrobial activities. The HPLC analysis showed higher phenolic and flavonoid content in Doum extract than that of Carob. The antimicrobial activity of the methanolic extracts of both Doum and Carob against foodborne pathogens showed that the most sensitive indicators were Bacillus cereus, C. albicans and S. aureus, followed by T. mentagrophyte and E. coli wherein, the diameter of clear zones was, 29, 27, 24, 23 and 13 mm, respectively. While no effect was noticed against Aspergillus flavus. On the other hand, the methanolic extract of Carob fruit exhibited only a weak antibacterial effect against B. cereus (20 mm). Six treatments of SFFSD were made using both Doum or Carob fruit powder as prebiotic and Lactobacillus paracasei as probiotic bacteria. The added levels from Doum were 2%, 4% and 6%, while that added from Carob were 5%, 10% and 15%. Adding Doum and Carob powder increased the containing of minerals;Ca, K, Mg and iron compared with control. Both viscosity and viability of L. paracasei for the SFFSD were increased with increasing the added levels from either Doum or Carob, compared with the control. Samples of SFFSD containing Carob powder, show superior sensory for all parameters and total score points during storage period, especially at a level of 10%. It seems evident that samples supplemented with Doum powder were also acceptable.展开更多

The material and Methods: The study was performed in six groups. The first group was the normal healthy control;the second group was rats injected with alloxan (diabetic control). Every one of the other four groups (diabetic rats) was ingested with each of the methanolic extracts of Kafta, Doum, Sammo and Araar (individually). The results: The results of chromosomal analysis showed that, diabetic rats had a highly significant increase of chromosomal aberrations compared to that of normal healthy control. Animals which treated with the four plants methanolic extracts showed significant improvements in the frequencies of chromosomal aberrations. In case of biochemical analysis, blood glucose level was significantly increased but immunoglobulins levels were decreased in diabetic albino rats. Diabetes increased serum total lipids, cholesterol, triglycerides and LDL but serum HDL was decreased. RNA and DNA as well as inhibited the nucleases (RNAase and DNAase) activity of both organs (liver and testes) tissue. The conclusions: It is concluded that diabetes is much harmful in the animal body, whilst the induction of flavonoids extract (by methanol) of Kafta, Somma, Araar and Doum reduced these harmful of diabetes.展开更多

Female rats were injected with 60 mg/kg b.w. alloxan to induce diabe-tes. Diabetic rats treated orally with the methanol extracts of tested plants till the 19 day of gestation. The present studies include the frequencies of chro-mosomal aberrations and nucleic acid system of liver in the female pregnant rats and their embryos. The results showed that injection of alloxan caused highly significant increase in chromosomal aberrations as well as in blood glucose levels as a result of diabetes in pregnant females. It also caused a high incidence of chromosomal deviation in embryos and decreased the liver soluble protein contents of female rats and their embryos. These effects in alloxanized animals were treated and improved by ingestion of the methanol extracts of the tested plants (Araar, Doum, Kafta and Somma) in which under their treatments, the inceased level of blood glu-cose of diabetic rats was deceased. Ingestion with the plants methanolic extracts improved and normalized the effects of diabetes in nucleic acids values of liver tissues. These were accompanied with nucleases (RNAase and DNAase) activities. The inhibited ac-tivities of both DNA ase and RNA ase of pregnant rats and their embryos were stimulated and read-justed around the normal values. Also administration of the plants methanol extracts decreased the per-centage of chromosomal aberrations in the female rats and embryos.
