In West Africa, plantains are eaten at all ripening stages, yet processing is limited to the unripe and semi-ripe. Adoptable technologies such as foam-mat drying will enhance its utilisation in indigenous meals and other food applications. Communities in West Pokot in Kenya have continued to experience increased precip...River basins in the drylands of Sub-Saharan Africa have traditionally been utilized for pastoral livelihoods under communal land tenure. Communities in West Pokot in Kenya have continued to experience increased precipitation and temperature as a result of climate variability and change. This study aimed at assessing the impact of climate variability and change at micro-basin level in order to address research and policy gaps on climate change and food security as policy arena shifts from centralized to decentralized governance in Kenya. Primary quantitative data was collected from 387 households’ perceptions of climate variability and change and its implications on food security were measured. Food security index score was calculated. The annual rainfall trend over Suam river basin for the period (1981-2020), was characterized by a linearly increasing annual rainfall trend. Mann Kendall test Z-statistics and Tau were at 2.3578 and 0.0720 respectively. The basin experienced the highest rainfall variability during the first decade (1981-1990) with the highest coefficient of rainfall variation noted at 11.5%. The highest temperature was recorded in the third decade (2001-2010) and fourth decade (2011-2020) at 27.0 and 28.2 degrees Celsius respectively. However, the overall index score for food security was 55.78 with food availability scoring the highest index, mean (SD) of 63.41 (36.52). This was attributed to households’ practice of both nomadic pastoralism and agro-pastoralism activities. Climate variability and change, have resulted in increased amount of rainfall received providing for opportunity investment in rain water harvesting to support both pastoralism and agro-pastoralism production to enhance food security.展开更多
The aim of the study was to determine the best food absorbents between wheat, rice and maize bran and palm kernel cake, from a technical and economic point of view, in order to make a better recommandation for their u...The aim of the study was to determine the best food absorbents between wheat, rice and maize bran and palm kernel cake, from a technical and economic point of view, in order to make a better recommandation for their use in the production process of food based on mango by-products (peels, peels + pulp). To this end, series of 18 kg of fresh feed were prepared and spread out in a stall for sun-drying using a randomized Fisher system. Preparations were made using either mango peels (75%) + absorbent (25%) or pulp + mango peels (67%) + sorbent (33%). The results show that mango Peel feed loses more water (WL) with lover production yields (PY), higher mango incorporation rates into dry feed (MRI), longer drying times (UDT) and lower production costs (CPkgPD) than mango peel + pulp. The average DM, MAT, ADF and NDF fiber contents were almost equal to those of mango peels + pulp feed. The average Crude Fiber (CF) (25.13%) and DEp (2839 kcal/kgDM) contents were higher for mango skin feed than for mango skin + pulp feed, at 8.59% and 2536 for MAT and DEp respectively. Mango peels + wheat bran (PSB25) and whole mango (MESB33) feeds recorded the highest and almost equal levels of TCP, NDF and MM. Production costs per kg of feed dry mater (CPkgDM) for feed produced at 25% were on average 33% higher than for whole mango (WM) feed. Excluding mango raw material, palm kernel meal (PK), rice bran (RB), maize bran (MB) and wheat bran (WB) can be ranked 1st, 2nd, 3rd and 4th in terms of cumulative performance of production parameters. Producers can then choose the type of sorbent they wish to use according to this ranking and the local availability of the sorbent. The influence of the external air parameters on food drying with different size, maturity, shape of the material is...In this study, the material is okra, a cucurbitaceous largely consumed in West Africa and South Asia. The influence of the external air parameters on food drying with different size, maturity, shape of the material is considered by convective drying. So, the okra was cut in several parts according to its three characteristic zones, the basis, the middle of the okra and the extremity because the three parts of the vegetable have not the same resistances in transfers by convective drying. The maturity of the okra also has an influence. The okra dries faster in its younger or older age. Okra dries slowly when its maturity is convenient to be consumed. The drying duration of okra with the age of 1, 2, 3, 4 and 5 days is respectively 580, 780, 990, 1200 and 850 min. When we consider the three (matters) constituent of the okra: the skin, the seeds and the central material, the central matter dries faster. The diffusion coefficient was identified in all cases in order to compare the influence of those intrinsic properties of that food.展开更多

In particular, the study evaluated the possibility about the combined treatment of food waste and human excrement after using food waste disposers (FWDs). The scenario including only composting (133 kg CO2 equiv./ton-household organic waste) or only FWDs (125 kg CO2 equiv./ton-household organic waste) was superior to the other scenarios in the environmental aspect and the scenario including only composting (101 USD/ton-household organic waste) was superior to the other scenarios in the economic aspect. However, the study discovered that 52% of greenhouse gas emission was reduced when sewage pretreatment was conducted in houses after using FWDs and also when biogas was collected on site and utilized in the private power station. Furthermore, the energy saving effect due to recovery of biogas has found to be larger in the environment aspect than in the economic aspect.展开更多
