Twenty–two rural and 106 urban households were randomly selected for weighed food intake Descriptive and inferential statistics were used to analyze collected data and significance at p < 0.05 accepted. Corn fufu with huckleberry was the most frequently consumed meal with little or no animal-source protein. Protein and B group vitamins intake of respondents in both communities were below the FAO/WHO recommended values while energy, iron, and vitamins A and C were in excess for most age groups. Adolescents 10 - 19 years and adults 20 years and above failed to meet at least 85% of RNI for calcium.展开更多

This study of the physico-chemical and nutritional properties of a soumara-based food broth was carried out with the aim of promoting the consumption of organic broth made from nere seeds (soumara). That is to alleviate certain metabolic diseases, which is a matter of food safety, and also to limit the risk for the health about the consumption of some cooking stocks on the market. Methods: Several natural ingredients such as nere seeds (soumara), ginger, black pepper, parsley and garlic were used to create a nere-based stock. All these ingredients were freeze-dried and the powder obtained was used to make the broth, regarding their physical and chemical properties. Results: The broth had a good protein content of 17.41 ± 0.367 g/100g, a lipid content of 16.80 ± 0.08 g/100g and a fiber content of 8.66 ± 0.04 g/100g. In terms of nutritional values, the broth showed good levels of calcium 184.21 ± 0.09 mg/100g, potassium 50.04 ± 1.45 mg/100g and iron and zinc. In terms of antioxidant activity, the broth also showed good antioxidant activity. Conclusion: Regarding the properties of our food broth, whose composition is based on natural ingredients, could be recommended for consumption and, its properties, could play an important role in preventing and combating certain metabolic diseases.展开更多

The majority of local dishes are being abandoned in favor of a minority ...The food and nutrition situation in Burkina Faso, like most developing countries in sub-Saharan Africa, is marked by growing food vulnerability. The majority of local dishes are being abandoned in favor of a minority of imported cereal dishes and other ultra-processed foods. This minority of cereal foods is blamed for stunted growth in children, while ultra-processed foods are linked to chronic diseases such as hypertension, certain types of diabetes and cancer. Knowledge of the nutritional value of local foods is needed to determine their nutritional quality. The aim of this study was to determine the nutritional values of local dishes based on millet, sorghum and cowpea in the Centre-North region. The methodology consisted of making an inventory of millet-, sorghum- and cowpea-based dishes using focus groups made up of women and men from three age groups comprising young people, adults and the elderly in the communes of Lebda and Boussouma. The dishes were reproduced, and standard biochemical methods were used for nutritional characterization. A total of 34 dishes were inventoried, including 16 millet/sorghum-based dishes, 8 cowpea-based dishes and 10 dishes composed of millet/sorghum and cowpea or leaves. The mean protein, carbohydrate, ash and iron contents per 100 g DM of the three types of dishes were significantly different (p ≤ 0.05), ranging respectively from 13.61 to 22.63 g, 70.76 to 80.88 g, 1.87 to 5.96 g and 7.67 to 12.06 mg. Those for lipid, energy and zinc were not significantly different, ranging from 5.51 to 6.56 g, from 427 to 433 Kcal and from 2.98 to 3.32 mg respectively. Cowpea-based and mixed dishes cover the nutritional requirements for protein, carbohydrates, iron, zinc and energy recommended for children and adults. The consumption of mixed dishes and cowpea-based dishes could be promoted by nutritional policy to reduce stunting and recommended to obese, hypertensive and diabetic people as part of their diet.展开更多

This intervention aimed to improve the knowledge, attitudes, and practices of mothers on food safety in the peri-urban areas of Bobo-Dioulasso in Burkina Faso. Methods: A total of 243 mothers of children under 5 years in the peri-urban of Bobo-Dioulasso were administered the FAO questionnaire for food safety knowledge, attitudes, and practices assessment during two cross-sectional surveys, before and after the intervention, in January and October 2017. The intervention included two components consisting of a theoretical phase (counselling and discussion) and cooking demonstrations implemented for ten months. To account for the before-and-after design of the study, the McNemar’s test was used to assess the effect of the intervention on food safety KAP of mothers of children under 5 years. Results: The mean age of mothers was 29 ± 6.2 years and 50.6% of them were between 20 and 29 years old. One for knowledge (cooking thoroughly with, p-value = 0.0001) and another for attitudes (perceived benefits of reheating leftovers before eating them, p-value = 0.0001), significantly increased after the intervention. In terms of food safety practices, all the indicators (cleaning of dirty surfaces, plates and utensils and storage of perishable foods) significantly increased (all p = 0.0001 Conclusion: This study provided some evidence of an effective nutrition education intervention for improving maternal KAP on food safety for their child’s feeding.展开更多

Moreover, the hydrolyzed derivative, arabinoxylan oligosaccharides(AXOS), demonstrates prebiotic and antioxidant properties, offering potential avenues to mitigate the risk of chronic diseases. This review summarizes current knowledge on the valorization of wheat bran AX in terms of the processing and nutritional properties of AX. Moreover, multiple novel applications of AX in the materials area, including biodegradable food packaging films, delivery of bioactive substances as nanoparticles, and the manufacture of food emulsifiers, are also highlighted to extend the utilization of AX. This review underscores the immense potential of wheat bran AX, advocating for its exploitation not only as a nutritional asset but also as a primary ingredient in advanced materials. BACKGROUND Unhealthy maternal diet leads to heavy metal exposures from the consumption of ultra-processed foods that may impact gene behavior across generations,creating conditions for the neurodevelopmental disorders...BACKGROUND Unhealthy maternal diet leads to heavy metal exposures from the consumption of ultra-processed foods that may impact gene behavior across generations,creating conditions for the neurodevelopmental disorders known as autism and attention deficit/hyperactivity disorder(ADHD).Children with these disorders have difficulty metabolizing and excreting heavy metals from their bloodstream,and the severity of their symptoms correlates with the heavy metal levels measured in their blood.Psychiatrists may play a key role in helping parents reduce their ultra-processed food and dietary heavy metal intake by providing access to effective nutritional epigenetics education.AIM To test the efficacy of nutritional epigenetics instruction in reducing parental ultra-processed food intake.METHODS The study utilized a semi-randomized test and control group pretest-posttest pilot study design with participants recruited from parents having a learning-disabled child with autism or ADHD.Twenty-two parents who met the inclusion criteria were randomly selected to serve in the test(n=11)or control(n=11)group.The test group participated in the six-week online nutritional epigenetics tutorial,while the control group did not.The efficacy of the nutritional epigenetics instruction was determined by measuring changes in parent diet and attitude using data derived from an online diet survey administered to the participants during the pre and post intervention periods.Diet intake scores were derived for both ultra-processed and whole/organic foods.Paired sample t-tests were conducted to determine any differences in mean diet scores within each group.RESULTS There was a significant difference in the diet scores of the test group between the pre-and post-intervention periods.The parents in the test group significantly reduced their intake of ultra-processed foods with a preintervention diet score of 70(mean=5.385,SD=2.534)and a post-intervention diet score of 113(mean=8.692,SD=1.750)and the paired t-test analysis showing a significance of P<0.001.The test group also significantly increased their consumption of whole and/or organic foods with a pre-intervention diet score of 100(mean=5.882,SD=2.472)and post-intervention diet score of 121(mean=7.118,SD=2.390)and the paired t-test analysis showing a significance of P<0.05.CONCLUSION Here we show nutritional epigenetics education can be used to reduce ultra-processed food intake and improve attitude among parents having learning-disabled children with autism or ADHD.展开更多

At the same time, in addi...Developing and developed countries alike are increasingly facing the dififcult question of how to feed more people amidst a host of emerging demographic, environmental, and health challenges. At the same time, in addition to food quantity, increased attention is being given to food quality attributes, in particular nutrition and safety. This is especially evident in China, where concerns are on the rise regarding the ability of China’s food production systems to deliver nutritious and safe food to a growing, urbanizing and more aflfuent population. These food and nutrition concerns come at a time when China is an increasingly inlfuential actor within the global food security network through activities such as production, consumption and trade. We argue that China has the opportunity to increase food and nutrition security both nationally and globally through a comprehensive policy agenda that focuses on institutional reforms, investments for and in agriculture, productive social safety nets, mutually beneifcial trade, and the exchange of know-how and technologies among developing countries and donors. This agenda will help China adapt its food production systems to the changing face of agriculture and to play a vital role in addressing the emerging challenges facing food and nutrition security within and beyond China in the coming decades.展开更多
With increasing population and changing demographics,food consumption has experienced a significant transition in quantity and quality.However,a dearth of knowledge remains regarding its environmental impacts and how ...With increasing population and changing demographics,food consumption has experienced a significant transition in quantity and quality.However,a dearth of knowledge remains regarding its environmental impacts and how it responds to demographic dynamics,particularly in emerging economies like China.Using the two-stage Quadratic Almost Demand System(QUAIDS)model,this study empirically examines the impact of demographic dynamics on food consumption and its environmental outcomes based on the provincial data from 2000 to 2020 in China.Under various scenarios,according to changes in demographics,we extend our analysis to project the long-term trend of food consumption and its environmental impacts,including greenhouse gas(GHG)emissions,water footprint(WF),and land appropriation(LA).The results reveal that an increase in the proportion of senior people significantly decreases the consumption of grain and livestock meat and increases the consumption of poultry,egg,and aquatic products,particularly for urban residents.Moreover,an increase in the proportion of males in the population leads to higher consumption of poultry and aquatic products.Correspondingly,in the current scenario of an increased aging population and sex ratio,it is anticipated that GHG emissions,WF,and LA are likely to decrease by 1.37,2.52,and 3.56%,respectively.More importantly,in the scenario adhering to the standards of nutritional intake according to the Dietary Guidelines for Chinese Residents in 2022,GHG emissions,WF,and LA in urban areas would increase by 12.78,20.94,and 18.32%,respectively.Our findings suggest that changing demographics should be considered when designing policies to mitigate the diet-environment-health trilemma and achieve sustainable food consumption.展开更多

This study examines the impacts of migration on left-behind family members’ food consumption and nutrient intake, particularly in remote rural areas in China. Based on household survey data collected from 611 smallholder rubber farmers in Xishuangbanna Dai Autonomous Prefecture of southwestern China, the empirical results suggest that the migration of family members contributes to improving household net income, whereas it negatively affects left-behind family members’ consumption of grain and pork. Migration also leads to a decrease in left-behind family members’ nutrient intake. Surprisingly, the economic returns of farmers’ migration not only do not foster the transformation of household food consumption from a staple food-dominated dietary structure to one including more meat and dairy products but also reduce left-behind family members’ nutrient intake. This study adds to the literature on the impact of farmers’ migration. The findings have important implications for better understanding the impacts of migration on farmers’ livelihood and human capital development in rural China.展开更多

Maize, soybean and peanut were blended in a ratio of 60:30:10 to pr...Nutritional evaluation of complementary food formulations from maize, soybean and peanut fortified with Moringa oleifera leaf powder was carried out. Maize, soybean and peanut were blended in a ratio of 60:30:10 to produce a complementary food, which was then fortified. While the unfortified food product (sample A) served as control, the other three formulations were fortified with 5%, 10% and 15% Moringa leaf powder to give three samples (B, C and D respectively) of fortified food. Nutritional composition determination and feeding trials were then carried out, using two weeks old male albino rats to determine the performance of the food formulations. While the crude protein, crude fibre, and ash contents of the diets increased significantly (p with fortification, with values ranging from 16.04% to 17.59%, 2.25% to 4.42% and 1.40% to 2.50% respectively, crude fat and carbohydrate decreased significantly (p < 0.05), with concomitant decrease in energy, with values ranging from 23.48% to 20.80%, 49.32% to 47.63% and 472.76% to 448.08 kcal/100g respectively in samples A to D. PER values significantly (p < 0.05) improved up to 10% substitution, from 1.77 in unfortified (sample A) to 1.90 in 10% fortified (sample C), but declined at 15% substitution (sample D) to 1.69. Similarly, NPR values increased from 0.71 to 0.76 and 0.68. However, all the PER values including that of Nestle Cerelac (2.04) were lower than, though within the same range, with the value of 2.10 recommended by the Protein Advisory Group (PAG) for complementary foods. Sample C (10% Moringa flour blend) gave the best performance after rat feeding trials.展开更多
The aim of the study was to determine the best food absorbents between wheat, rice and maize bran and palm kernel cake, from a technical and economic point of view, in order to make a better recommandation for their u...The aim of the study was to determine the best food absorbents between wheat, rice and maize bran and palm kernel cake, from a technical and economic point of view, in order to make a better recommandation for their use in the production process of food based on mango by-products (peels, peels + pulp). To this end, series of 18 kg of fresh feed were prepared and spread out in a stall for sun-drying using a randomized Fisher system. Preparations were made using either mango peels (75%) + absorbent (25%) or pulp + mango peels (67%) + sorbent (33%). The results show that mango Peel feed loses more water (WL) with lover production yields (PY), higher mango incorporation rates into dry feed (MRI), longer drying times (UDT) and lower production costs (CPkgPD) than mango peel + pulp. The average DM, MAT, ADF and NDF fiber contents were almost equal to those of mango peels + pulp feed. The average Crude Fiber (CF) (25.13%) and DEp (2839 kcal/kgDM) contents were higher for mango skin feed than for mango skin + pulp feed, at 8.59% and 2536 for MAT and DEp respectively. Mango peels + wheat bran (PSB25) and whole mango (MESB33) feeds recorded the highest and almost equal levels of TCP, NDF and MM. Production costs per kg of feed dry mater (CPkgDM) for feed produced at 25% were on average 33% higher than for whole mango (WM) feed. Excluding mango raw material, palm kernel meal (PK), rice bran (RB), maize bran (MB) and wheat bran (WB) can be ranked 1st, 2nd, 3rd and 4th in terms of cumulative performance of production parameters. Producers can then choose the type of sorbent they wish to use according to this ranking and the local availability of the sorbent. These feeds can be used for both ruminants and monogastrics, but are better suited to ruminant feeding due to their high fiber content.展开更多

The impact of elevated CO2 on plant growth and development and the nutritional quality in relation to major nutrients in many crops has been explored extensively. However, information on the elevated CO2 effects on the health-promoting phytochemicals in food crops is rather limited. Major nutrients in food crops including protein, phosphorus, potassium, calcium, iron, zinc and other micronutrients in many food crops are known to be suppressed at elevated CO2 levels. Elevated CO2 increases carbohydrate accumulation but decreases nitrogen accumulation in plants thus affecting their C-N ratio. A number of studies show that high C-N ratio and nitrogen limiting conditions in plants can result in the accumulation of carbon-based secondary metabolites, many of which are health-promoting phytochemicals and allelochemicals involved in plants’ defense against pathogens and herbivory. Although the results from these studies are variable, it can be concluded that while elevated CO2 is known to suppress the content of major nutrients, it may actually have a favorable impact on the accumulation of carbon-based phytochemicals in food crops.展开更多

Not only does increased biodiversity contribute to nutrient production and consumption, but it acts as a safeguard against food shortages due to pests and diseases by spreading the risk. Biodiversity can improve dietary diversity in such a way to ultimately contribute to improved food and nutrition security. As a result biodiversity is often highlighted in global discussions related to food and nutrition security. Potatoes (Solanum tuberosum L.) are highly biodiverse food crops, with more than 4000 different cultivars grown globally. The crop is sometimes considered as part of the vegetable component of food baskets, but it is mainly added to meals as a starch because potatoes have a high starch content and are thus high in energy. However, significant differences in the nutritional content (including micronutrient composition) of different potato cultivars have been reported in many countries. It is therefore proposed that specific cultivars could potentially contribute more to critical nutrients required in the diet of countries at risk of malnutrition. The nutritional profile (macronutrients and minerals) of 11 potato cultivars cultivated in sub-Saharan Africa was determined and the contribution which these different potatoes could make to the diet, and consequently to food and nutrition security, is discussed. The results showed that significant differences are found in the nutritional content between the different cultivars. Significant differences (p < 0.001) were found in macronutrients such as protein and fat as well as micronutrients such as copper, phosphorus and potassium. These results indicate the potentially beneficial role which a biodiverse range of crops such as potatoes, could play in the food and nutrition security of developing countries.展开更多

Despite the considerable increase in population in many of these countries, food production per capita in 1988-90 was significantly higher as compared to 1979-81 figures, the increase being specially marked in such countries as Vietnam, Cambodia, Indonesia, and Malaysia. Available daily calorie supply was adequate to meet the requirement. The overall pattern of food production however has shown little change, with cereal production continuing to account for a predominant part of food production. There is no evidence of a significant uptrend with respect to production of pulses, milk, horticultural products, poultry or meat production in most countries.A uniquc and unfortunate feature of the nutrition situation in South-Asian countries is that the incidence of low birth weight deliveries is as high as 34% (1990), ranging from 25% in Sri Lanka to 50% in Bangladesh (as against less than 7% in the countries of Europe and North America). Even in countries of Africa where the overall food and nutrition situation is worse than in South Asia, the incidence is well below 20%. This is a reflection of the poor state of maternal nutrition in pregnancy.Florid nutritional deficiency diseases have shown a steep decline over the last two decades, but goitre and iron deficiency anaemia continue to be major public health problems, though some headway has been made with regard to the control of the former. Severe forms of growth retardation in children have declined but the majority suffer from mild and moderate forms of growth retardation.Countries of the Region are in varying stages of developmental transition. Among the burgeoning middle classes in some of these countries there are evidences of escalation of degenerative diseases such as diabetes and coronary heart disease. Using the results of a colloquium held at the University of Hohenheim(Germany) in September 2016 leading up to the recent High Level Panel of Experts(HLPE) Note on Critical and Emerging Issues for Food Security and Nutrition, this article underlines the role of research and innovation as a social and political process and draws attention to neglected types of knowledge. Vegetable oi...Nutritional oil for infant formula food was microencapsulated by the spray drying method with coating materials including maltodextrin (MD), soy protein isolate (SPI), and emulsifier (soy lecithin). Vegetable oil blend was prepared by mixing coconut oil, safflower oil and soybean oil at a ratio to achieve a fatty acid profile comparable to human milk fat (HMF). The fatty acid composition of the product was determined by capillary gas chromatograph. As a result, the composition was as close as possible to that of HMF, it could be used for infant fomular food to make up some deficiencies of milk powder in nutrition and functional properties. Furthermore, the glass transition temperature (Tg) of the wall material was determined by DSC and its Tg was 66.42℃. It provided a theoretical basis for the storage of the product at the normal temperature.展开更多
文摘This study determined the nutritional status of households in North western region of Cameroon using weighed food intake. Twenty–two rural and 106 urban households were randomly selected for weighed food intake Descriptive and inferential statistics were used to analyze collected data and significance at p < 0.05 accepted. Corn fufu with huckleberry was the most frequently consumed meal with little or no animal-source protein. Protein and B group vitamins intake of respondents in both communities were below the FAO/WHO recommended values while energy, iron, and vitamins A and C were in excess for most age groups. Adolescents 10 - 19 years and adults 20 years and above failed to meet at least 85% of RNI for calcium.
文摘Purpose: Diet and eating habits are major risk factors for the health and the development of disease, such as, for example, metabolic disorder leading to cardiovascular pathology and cancer, decreased immunity exposing to infections. This study of the physico-chemical and nutritional properties of a soumara-based food broth was carried out with the aim of promoting the consumption of organic broth made from nere seeds (soumara). That is to alleviate certain metabolic diseases, which is a matter of food safety, and also to limit the risk for the health about the consumption of some cooking stocks on the market. Methods: Several natural ingredients such as nere seeds (soumara), ginger, black pepper, parsley and garlic were used to create a nere-based stock. All these ingredients were freeze-dried and the powder obtained was used to make the broth, regarding their physical and chemical properties. Results: The broth had a good protein content of 17.41 ± 0.367 g/100g, a lipid content of 16.80 ± 0.08 g/100g and a fiber content of 8.66 ± 0.04 g/100g. In terms of nutritional values, the broth showed good levels of calcium 184.21 ± 0.09 mg/100g, potassium 50.04 ± 1.45 mg/100g and iron and zinc. In terms of antioxidant activity, the broth also showed good antioxidant activity. Conclusion: Regarding the properties of our food broth, whose composition is based on natural ingredients, could be recommended for consumption and, its properties, could play an important role in preventing and combating certain metabolic diseases.
文摘The food and nutrition situation in Burkina Faso, like most developing countries in sub-Saharan Africa, is marked by growing food vulnerability. The majority of local dishes are being abandoned in favor of a minority of imported cereal dishes and other ultra-processed foods. This minority of cereal foods is blamed for stunted growth in children, while ultra-processed foods are linked to chronic diseases such as hypertension, certain types of diabetes and cancer. Knowledge of the nutritional value of local foods is needed to determine their nutritional quality. The aim of this study was to determine the nutritional values of local dishes based on millet, sorghum and cowpea in the Centre-North region. The methodology consisted of making an inventory of millet-, sorghum- and cowpea-based dishes using focus groups made up of women and men from three age groups comprising young people, adults and the elderly in the communes of Lebda and Boussouma. The dishes were reproduced, and standard biochemical methods were used for nutritional characterization. A total of 34 dishes were inventoried, including 16 millet/sorghum-based dishes, 8 cowpea-based dishes and 10 dishes composed of millet/sorghum and cowpea or leaves. The mean protein, carbohydrate, ash and iron contents per 100 g DM of the three types of dishes were significantly different (p ≤ 0.05), ranging respectively from 13.61 to 22.63 g, 70.76 to 80.88 g, 1.87 to 5.96 g and 7.67 to 12.06 mg. Those for lipid, energy and zinc were not significantly different, ranging from 5.51 to 6.56 g, from 427 to 433 Kcal and from 2.98 to 3.32 mg respectively. Cowpea-based and mixed dishes cover the nutritional requirements for protein, carbohydrates, iron, zinc and energy recommended for children and adults. The consumption of mixed dishes and cowpea-based dishes could be promoted by nutritional policy to reduce stunting and recommended to obese, hypertensive and diabetic people as part of their diet.
文摘Background: This study assessed the effect of a nutrition education intervention. This intervention aimed to improve the knowledge, attitudes, and practices of mothers on food safety in the peri-urban areas of Bobo-Dioulasso in Burkina Faso. Methods: A total of 243 mothers of children under 5 years in the peri-urban of Bobo-Dioulasso were administered the FAO questionnaire for food safety knowledge, attitudes, and practices assessment during two cross-sectional surveys, before and after the intervention, in January and October 2017. The intervention included two components consisting of a theoretical phase (counselling and discussion) and cooking demonstrations implemented for ten months. To account for the before-and-after design of the study, the McNemar’s test was used to assess the effect of the intervention on food safety KAP of mothers of children under 5 years. Results: The mean age of mothers was 29 ± 6.2 years and 50.6% of them were between 20 and 29 years old. One for knowledge (cooking thoroughly with, p-value = 0.0001) and another for attitudes (perceived benefits of reheating leftovers before eating them, p-value = 0.0001), significantly increased after the intervention. In terms of food safety practices, all the indicators (cleaning of dirty surfaces, plates and utensils and storage of perishable foods) significantly increased (all p = 0.0001 Conclusion: This study provided some evidence of an effective nutrition education intervention for improving maternal KAP on food safety for their child’s feeding.

文摘Portulaca oleracea L.,commonly known as purslane,is a worldwide weed species belonging to the family Portulacaceae and has been known as“Global Panacea”.As one of the most widely consumed green vegetables and medicinal plants around the world,it has recently been re-evaluated as a potential“new crop”due to the properties that differentiate it as one of the best vegetable sources of omega-3 fatty acid(α-linolenic acid),as well as a variety of nutrients and phytochemicals.Accordingly,emerging research has found that purslane exhibits health-promoting properties like anti-inflammatory,anti-hyperglycemic,antioxidant,neuroprotective,and immunomodulatory.These findings suggest that this species possesses a potential using as a dietary supplement beyond potherb and traditional medicine.This review systematically summarizes the up-to-date research carried out on purslane,including the nutritional compositions,bioactive compounds,and health benefits it exerts as well as limitations,challenges,and future directions of research.Finally,we hope that this review would provide purslane with a comprehensive reference and future scope as functional and health-promoting food for disease prevention and treatment.

文摘Wheat bran, a principal byproduct of flour milling, stands as an abundant source of dietary fiber, yet its economic potential remains under-exploited in current forage applications. Arabinoxylan(AX), constituting the core of dietary fiber, emerges as a versatile compound with multifaceted functionalities. Its nutritional significance,coupled with its role in cereal food processing, has prompted a surge of studies focusing on the valorization of wheat bran AX. Moreover, the hydrolyzed derivative, arabinoxylan oligosaccharides(AXOS), demonstrates prebiotic and antioxidant properties, offering potential avenues to mitigate the risk of chronic diseases. This review summarizes current knowledge on the valorization of wheat bran AX in terms of the processing and nutritional properties of AX. Moreover, multiple novel applications of AX in the materials area, including biodegradable food packaging films, delivery of bioactive substances as nanoparticles, and the manufacture of food emulsifiers, are also highlighted to extend the utilization of AX. This review underscores the immense potential of wheat bran AX, advocating for its exploitation not only as a nutritional asset but also as a primary ingredient in advanced materials. The synthesis of nutritional and materials perspectives accentuates the multifaceted utility of wheat bran AX, thereby paving the way for sustainable valorization pathways. By unraveling the latent potential within AX, this paper advocates for the holistic and sustainable utilization of wheat bran in diverse, value-added applications.
文摘BACKGROUND Unhealthy maternal diet leads to heavy metal exposures from the consumption of ultra-processed foods that may impact gene behavior across generations,creating conditions for the neurodevelopmental disorders known as autism and attention deficit/hyperactivity disorder(ADHD).Children with these disorders have difficulty metabolizing and excreting heavy metals from their bloodstream,and the severity of their symptoms correlates with the heavy metal levels measured in their blood.Psychiatrists may play a key role in helping parents reduce their ultra-processed food and dietary heavy metal intake by providing access to effective nutritional epigenetics education.AIM To test the efficacy of nutritional epigenetics instruction in reducing parental ultra-processed food intake.METHODS The study utilized a semi-randomized test and control group pretest-posttest pilot study design with participants recruited from parents having a learning-disabled child with autism or ADHD.Twenty-two parents who met the inclusion criteria were randomly selected to serve in the test(n=11)or control(n=11)group.The test group participated in the six-week online nutritional epigenetics tutorial,while the control group did not.The efficacy of the nutritional epigenetics instruction was determined by measuring changes in parent diet and attitude using data derived from an online diet survey administered to the participants during the pre and post intervention periods.Diet intake scores were derived for both ultra-processed and whole/organic foods.Paired sample t-tests were conducted to determine any differences in mean diet scores within each group.RESULTS There was a significant difference in the diet scores of the test group between the pre-and post-intervention periods.The parents in the test group significantly reduced their intake of ultra-processed foods with a preintervention diet score of 70(mean=5.385,SD=2.534)and a post-intervention diet score of 113(mean=8.692,SD=1.750)and the paired t-test analysis showing a significance of P<0.001.The test group also significantly increased their consumption of whole and/or organic foods with a pre-intervention diet score of 100(mean=5.882,SD=2.472)and post-intervention diet score of 121(mean=7.118,SD=2.390)and the paired t-test analysis showing a significance of P<0.05.CONCLUSION Here we show nutritional epigenetics education can be used to reduce ultra-processed food intake and improve attitude among parents having learning-disabled children with autism or ADHD.

With broad bean nutrition flour as a sample, the preparation of the combi-nation of staple food was also described. In addition, the main nutritional value of broad bean nutrition flour was introduced. Compared with those of other single flours, the nutritional value of broad bean nutrition flour was improved. Moreover, the nutrients in the broad bean nutrition flour would not be destroyed during the processing and preparation of staple food, and the processed steamed bread and raw noodle are more characteristic. The application value and prospects of broad bean nutrition flour, as a combination of staple food, were further discussed.

文摘Butter has become renowned among consumers because of its exceptional flavor and taste.Nevertheless,conventional butter is deemed“unhealthy”due to its high concentration of saturated fats and cholesterol,which are linked to the development of cardiovascular ailments.Improving the health benefits of butter has become an essential topic of research in the butter industry.This review focuses on researches that have made improvements to functionality of butter,including the changes in fatty acid composition,cholesterol reduction,incorporation with bioactive substances,development of new sources.The reduction of saturated fatty acids and cholesterol in butter can help reduce the risk of disease from eating butter.In addition,incorporating probiotics or natural plant extracts can achieve nutritional functions such as balancing intestinal flora,enhancing nutrient absorption,and increasing the body’s antioxidant capacity.Butter substitute products can be based on new vegetable oils,insect fats or microbial fats,which cater to the consumer demands for low-calorie butter while reducing the environmental impact that results from butter production.This review summarizes the effects and characteristics of various improvement methods and proposes some possible directions for future development of functional butter.
文摘Developing and developed countries alike are increasingly facing the dififcult question of how to feed more people amidst a host of emerging demographic, environmental, and health challenges. At the same time, in addition to food quantity, increased attention is being given to food quality attributes, in particular nutrition and safety. This is especially evident in China, where concerns are on the rise regarding the ability of China’s food production systems to deliver nutritious and safe food to a growing, urbanizing and more aflfuent population. These food and nutrition concerns come at a time when China is an increasingly inlfuential actor within the global food security network through activities such as production, consumption and trade. We argue that China has the opportunity to increase food and nutrition security both nationally and globally through a comprehensive policy agenda that focuses on institutional reforms, investments for and in agriculture, productive social safety nets, mutually beneifcial trade, and the exchange of know-how and technologies among developing countries and donors. This agenda will help China adapt its food production systems to the changing face of agriculture and to play a vital role in addressing the emerging challenges facing food and nutrition security within and beyond China in the coming decades.

文摘With increasing population and changing demographics,food consumption has experienced a significant transition in quantity and quality.However,a dearth of knowledge remains regarding its environmental impacts and how it responds to demographic dynamics,particularly in emerging economies like China.Using the two-stage Quadratic Almost Demand System(QUAIDS)model,this study empirically examines the impact of demographic dynamics on food consumption and its environmental outcomes based on the provincial data from 2000 to 2020 in China.Under various scenarios,according to changes in demographics,we extend our analysis to project the long-term trend of food consumption and its environmental impacts,including greenhouse gas(GHG)emissions,water footprint(WF),and land appropriation(LA).The results reveal that an increase in the proportion of senior people significantly decreases the consumption of grain and livestock meat and increases the consumption of poultry,egg,and aquatic products,particularly for urban residents.Moreover,an increase in the proportion of males in the population leads to higher consumption of poultry and aquatic products.Correspondingly,in the current scenario of an increased aging population and sex ratio,it is anticipated that GHG emissions,WF,and LA are likely to decrease by 1.37,2.52,and 3.56%,respectively.More importantly,in the scenario adhering to the standards of nutritional intake according to the Dietary Guidelines for Chinese Residents in 2022,GHG emissions,WF,and LA in urban areas would increase by 12.78,20.94,and 18.32%,respectively.Our findings suggest that changing demographics should be considered when designing policies to mitigate the diet-environment-health trilemma and achieve sustainable food consumption.

文摘While migration is widely recognized as a valid option for improving farmers’ income, the welfare effects of migration on left-behind family members are ambiguous. This study examines the impacts of migration on left-behind family members’ food consumption and nutrient intake, particularly in remote rural areas in China. Based on household survey data collected from 611 smallholder rubber farmers in Xishuangbanna Dai Autonomous Prefecture of southwestern China, the empirical results suggest that the migration of family members contributes to improving household net income, whereas it negatively affects left-behind family members’ consumption of grain and pork. Migration also leads to a decrease in left-behind family members’ nutrient intake. Surprisingly, the economic returns of farmers’ migration not only do not foster the transformation of household food consumption from a staple food-dominated dietary structure to one including more meat and dairy products but also reduce left-behind family members’ nutrient intake. This study adds to the literature on the impact of farmers’ migration. The findings have important implications for better understanding the impacts of migration on farmers’ livelihood and human capital development in rural China.
文摘Nutritional evaluation of complementary food formulations from maize, soybean and peanut fortified with Moringa oleifera leaf powder was carried out. Maize, soybean and peanut were blended in a ratio of 60:30:10 to produce a complementary food, which was then fortified. While the unfortified food product (sample A) served as control, the other three formulations were fortified with 5%, 10% and 15% Moringa leaf powder to give three samples (B, C and D respectively) of fortified food. Nutritional composition determination and feeding trials were then carried out, using two weeks old male albino rats to determine the performance of the food formulations. While the crude protein, crude fibre, and ash contents of the diets increased significantly (p with fortification, with values ranging from 16.04% to 17.59%, 2.25% to 4.42% and 1.40% to 2.50% respectively, crude fat and carbohydrate decreased significantly (p < 0.05), with concomitant decrease in energy, with values ranging from 23.48% to 20.80%, 49.32% to 47.63% and 472.76% to 448.08 kcal/100g respectively in samples A to D. PER values significantly (p < 0.05) improved up to 10% substitution, from 1.77 in unfortified (sample A) to 1.90 in 10% fortified (sample C), but declined at 15% substitution (sample D) to 1.69. Similarly, NPR values increased from 0.71 to 0.76 and 0.68. However, all the PER values including that of Nestle Cerelac (2.04) were lower than, though within the same range, with the value of 2.10 recommended by the Protein Advisory Group (PAG) for complementary foods. Sample C (10% Moringa flour blend) gave the best performance after rat feeding trials.
文摘The aim of the study was to determine the best food absorbents between wheat, rice and maize bran and palm kernel cake, from a technical and economic point of view, in order to make a better recommandation for their use in the production process of food based on mango by-products (peels, peels + pulp). To this end, series of 18 kg of fresh feed were prepared and spread out in a stall for sun-drying using a randomized Fisher system. Preparations were made using either mango peels (75%) + absorbent (25%) or pulp + mango peels (67%) + sorbent (33%). The results show that mango Peel feed loses more water (WL) with lover production yields (PY), higher mango incorporation rates into dry feed (MRI), longer drying times (UDT) and lower production costs (CPkgPD) than mango peel + pulp. The average DM, MAT, ADF and NDF fiber contents were almost equal to those of mango peels + pulp feed. The average Crude Fiber (CF) (25.13%) and DEp (2839 kcal/kgDM) contents were higher for mango skin feed than for mango skin + pulp feed, at 8.59% and 2536 for MAT and DEp respectively. Mango peels + wheat bran (PSB25) and whole mango (MESB33) feeds recorded the highest and almost equal levels of TCP, NDF and MM. Production costs per kg of feed dry mater (CPkgDM) for feed produced at 25% were on average 33% higher than for whole mango (WM) feed. Excluding mango raw material, palm kernel meal (PK), rice bran (RB), maize bran (MB) and wheat bran (WB) can be ranked 1st, 2nd, 3rd and 4th in terms of cumulative performance of production parameters. Producers can then choose the type of sorbent they wish to use according to this ranking and the local availability of the sorbent. These feeds can be used for both ruminants and monogastrics, but are better suited to ruminant feeding due to their high fiber content.

文摘Mycotoxins are toxic secondary metabolites produced by filamentous fungi that are commonly detected as natural contaminants in agricultural commodities worldwide.Mycotoxin exposure can lead to mycotoxicosis in both animals and humans when found in animal feeds and food products,and at lower concentrations can affect animal performance by disrupting nutrient digestion,absorption,metabolism,and animal physiology.Thus,mycotoxin contamination of animal feeds represents a significant issue to the livestock industry and is a health threat to food animals.Since prevention of mycotoxin formation is difficult to undertake to avoid contamination,mitigation strategies are needed.This review explores how the mycotoxins aflatoxins,deoxynivalenol,zearalenone,fumonisins and ochratoxin A impose nutritional and metabolic effects on food animals and summarizes mitigation strategies to reduce the risk of mycotoxicity.
文摘Rising atmospheric CO2 levels pose many challenges to global climate, thus to all forms of life including plants. The impact of elevated CO2 on plant growth and development and the nutritional quality in relation to major nutrients in many crops has been explored extensively. However, information on the elevated CO2 effects on the health-promoting phytochemicals in food crops is rather limited. Major nutrients in food crops including protein, phosphorus, potassium, calcium, iron, zinc and other micronutrients in many food crops are known to be suppressed at elevated CO2 levels. Elevated CO2 increases carbohydrate accumulation but decreases nitrogen accumulation in plants thus affecting their C-N ratio. A number of studies show that high C-N ratio and nitrogen limiting conditions in plants can result in the accumulation of carbon-based secondary metabolites, many of which are health-promoting phytochemicals and allelochemicals involved in plants’ defense against pathogens and herbivory. Although the results from these studies are variable, it can be concluded that while elevated CO2 is known to suppress the content of major nutrients, it may actually have a favorable impact on the accumulation of carbon-based phytochemicals in food crops.
文摘Biodiversity is considered a critical measure of the agricultural health of the world. Not only does increased biodiversity contribute to nutrient production and consumption, but it acts as a safeguard against food shortages due to pests and diseases by spreading the risk. Biodiversity can improve dietary diversity in such a way to ultimately contribute to improved food and nutrition security. As a result biodiversity is often highlighted in global discussions related to food and nutrition security. Potatoes (Solanum tuberosum L.) are highly biodiverse food crops, with more than 4000 different cultivars grown globally. The crop is sometimes considered as part of the vegetable component of food baskets, but it is mainly added to meals as a starch because potatoes have a high starch content and are thus high in energy. However, significant differences in the nutritional content (including micronutrient composition) of different potato cultivars have been reported in many countries. It is therefore proposed that specific cultivars could potentially contribute more to critical nutrients required in the diet of countries at risk of malnutrition. The nutritional profile (macronutrients and minerals) of 11 potato cultivars cultivated in sub-Saharan Africa was determined and the contribution which these different potatoes could make to the diet, and consequently to food and nutrition security, is discussed. The results showed that significant differences are found in the nutritional content between the different cultivars. Significant differences (p < 0.001) were found in macronutrients such as protein and fat as well as micronutrients such as copper, phosphorus and potassium. These results indicate the potentially beneficial role which a biodiverse range of crops such as potatoes, could play in the food and nutrition security of developing countries.
文摘Food production in the countries of South and South-East Asia has shown a general upward trend during the last decade. Despite the considerable increase in population in many of these countries, food production per capita in 1988-90 was significantly higher as compared to 1979-81 figures, the increase being specially marked in such countries as Vietnam, Cambodia, Indonesia, and Malaysia. Available daily calorie supply was adequate to meet the requirement. The overall pattern of food production however has shown little change, with cereal production continuing to account for a predominant part of food production. There is no evidence of a significant uptrend with respect to production of pulses, milk, horticultural products, poultry or meat production in most countries.A uniquc and unfortunate feature of the nutrition situation in South-Asian countries is that the incidence of low birth weight deliveries is as high as 34% (1990), ranging from 25% in Sri Lanka to 50% in Bangladesh (as against less than 7% in the countries of Europe and North America). Even in countries of Africa where the overall food and nutrition situation is worse than in South Asia, the incidence is well below 20%. This is a reflection of the poor state of maternal nutrition in pregnancy.Florid nutritional deficiency diseases have shown a steep decline over the last two decades, but goitre and iron deficiency anaemia continue to be major public health problems, though some headway has been made with regard to the control of the former. Severe forms of growth retardation in children have declined but the majority suffer from mild and moderate forms of growth retardation.Countries of the Region are in varying stages of developmental transition. Among the burgeoning middle classes in some of these countries there are evidences of escalation of degenerative diseases such as diabetes and coronary heart disease. With increasing life expectancy, geriatric nutritlonal problems will demand increasing attention
文摘Food Security and Nutrition(FSN) is influenced by diverse and complex factors, and therefore requires a holistic approach to agriculture and food systems plus integration of knowledge from diverse sources in science and society. Using the results of a colloquium held at the University of Hohenheim(Germany) in September 2016 leading up to the recent High Level Panel of Experts(HLPE) Note on Critical and Emerging Issues for Food Security and Nutrition, this article underlines the role of research and innovation as a social and political process and draws attention to neglected types of knowledge. It illustrates the potential of knowledge co-production and co-innovation to transform food systems in order to achieve the Sustainable Development Goals.
文摘Nutritional oil for infant formula food was microencapsulated by the spray drying method with coating materials including maltodextrin (MD), soy protein isolate (SPI), and emulsifier (soy lecithin). Vegetable oil blend was prepared by mixing coconut oil, safflower oil and soybean oil at a ratio to achieve a fatty acid profile comparable to human milk fat (HMF). The fatty acid composition of the product was determined by capillary gas chromatograph. As a result, the composition was as close as possible to that of HMF, it could be used for infant fomular food to make up some deficiencies of milk powder in nutrition and functional properties. Furthermore, the glass transition temperature (Tg) of the wall material was determined by DSC and its Tg was 66.42℃. It provided a theoretical basis for the storage of the product at the normal temperature.
