The objective of this study was to investigate variation and trends in dough rheological properties and flour quality traits in 330 Chinese wheat varieties. The dough rheological properties of development time(DT), stability time(ST), and farinograph quality number(FQN)were evaluated, as well as the flour quality traits of protein(PC), wet gluten content(WGC), and sedimentation value(SV). The coefficients of variation of DT(40.5%), ST(58.1%), and FQN(42.4%) were higher than those of PC(9.1%), WGC(10.1%), and SV(15.3%). Normal distributions were observed for the flour quality indices but not for the rheological parameters. SV was strongly correlated with the three rheological parameters and accordingly might be used as a primary indicator for dough rheological property evaluation. Our results showed that there has been marked improvement in dough rheological properties for Chinese wheat varieties released since 1986, while flour quality has remained stable. 展开更多

The rheological properties of the complex gels were studied by dynamic viscoelastic measurement. The gelation kinetics of the complex gels was studied and the critical getation points of the gels were exactly determined by the Winter-Chambon criterion. The effects of temperature and composite ratio on the shear storage modulus (G'), the loss modulus (G") and the sol-gel transition points were investigated. 展开更多

The nutritional qualities of the formulated flours were determined by the Kjeldahl, AOAC 985-29, UV-VIS spectrophotometry (DR 5000;HACH and LANGE, France) and Soxhlet gravimetric methods. The compounds obtained are respectively: Protein, carbohydrate, lipid, micronutrient and vitamin contents. Effect of Blending Doum (<i>Hyphaene thebaica</i>) Powder with Wheat Flour on the Nutritional Value and Quality of Cake 被引量:1

Pastry is an essential part of food stuff people like, especially preferring those made of wheat flour: cakes, biscuits, pancakes, etc. The nutritive value of the products mentioned above is not high. Therefore, there is a need to increase it by adding something like doum fruit (Hyphaene thebaica L.), which is a widespread in Upper Egypt. Doum fruit is a rich source of fibers and antioxidants, also other valuable substances such as carbohydrates and minerals especially potassium (K for people suffering from blood pressure problems). This investigation was carried out to study the possibility of utilization doum fruit powder in cake production. Five levels of wheat flour substitution were used 0%, 5%, 10%, 15% and 20% to produce cake. Also, the effects of blends on farinograph parameters were studied. Results indicated that substitution of doum powder (D.P) led to increase the water absorption (%) and dough weakening (B.U), whereas dough stability (min) was decreased. The water holding capacity of blends increased with increasing the level of substitution. The chemical, physical and sensory characteristics of the prepared cakes were studied. Results showed that increasing the levels of substitution increased the total fat, crude fiber and ash contents in produced cake compared with control. Minerals of the produced cake showed an increment in K and Mg, while slightly increment in Ca, Fe and Zn with increasing the level of substitution. Total phenol and antioxidant activity (AO) increased in substituted cake. Physical attributes of the produced cakes were evaluated and results showed that volume of substituted cakes decreased with increasing the level of replacement except for 10% level it increased. Results of textural analysis showed that D.P fiber decreased all the parameters. Concerning cake color, as the percentage of D.P increased, the color of the cake became darker and had high a and b values. The sensory evaluation results showed an insignificantly decrease in the acceptability by increasing the doum powder substitution comparing with control. 展开更多

To promote the commercialization of yellow pea flour(YPF)due to its nutritional benefits.Four biscuits with different YPF ratio(10%–50%)were conducted to explore the optimal addition percentage.The effects of YPF on the rheological and baking performance of biscuits were performed.The results showed that the substitution ratio of YPF and milling methods had a critical impact on the rheological properties of dough.The dough stability decreased graduallywhile a softening degree increased with YPF ratio increased.In a term of biscuits,the dimensions of length(L),width(W),thickness(T)and color(L*)of biscuits reduced as YPF addition ratio increased,while colors(a*and b*)and hardness apparently increased.In addition,milling methods had a great influence on the texture and sensory evaluation of four biscuits.The dimensions and color parameters of biscuits from fine flours were larger than that from coarse flours,whereas hardness from fine flours was relatively softer,indicating flour with fine particle size could accelerate the extension and expansion of dough network,and improve Maillard reaction during baking.The highest sensory score for short and tough biscuits was obtained given at YPF ratio of 30%without compromising the qualities of biscuits. 展开更多

Effect of Pullulan and Hydrocolloids on Rheological Properties and Quality Parameters of Wheat-Soy Baladi Bread

The aim of the study was to conduct a comparative evaluation of pullulan and hydrocolloid combinations on rheological properties and quality parameters of wheat-soy baladi bread. Pullulan polysaccharides (Pu) and hydrocolloids as Arabic gum (AG), K-carrageenan (KC), pectin (P), and xanthan gum (XG) were applied. Rheological properties of samples included Pu and hydrocolloids were analyzed through extensiograph and farinograph. The crust color, staling, and sensory attributes of bread were evaluated. Results revealed that wheat flour (WF) has lower water absorption capacity, dough development time, mixing tolerance index, and resistance to extension however, has higher dough stability, extensibility, and dough energy compared to wheat-soy flour (WSF). Pu and/or hydrocolloids addition to WSF dough evidently improved bread quality. Pu was significantly enhanced crust color and yielded fresher bread relative to control. Additionally, Pu showed the highest Alkaline Water Retention Capacity (AWRC) value after 5 days at 25°C ± 2°C. Results demonstrated that hydrocolloids especially pullulan can significantly improve dough properties, baking quality, sensory acceptability, and delay staling of wheat-soy baladi bread. 展开更多

本实验探究并分析甜荞全谷物粉对小麦面团流变学特性及鲜湿面条质构特性、水分分布、蛋白质二级结构及分子质量分布、微观结构和色泽的影响。结果表明:当甜荞全谷物粉添加量为30%时,面团具有较高的G’(5.3×10^(5) Pa),且tanδ值达... 本实验探究并分析甜荞全谷物粉对小麦面团流变学特性及鲜湿面条质构特性、水分分布、蛋白质二级结构及分子质量分布、微观结构和色泽的影响。结果表明:当甜荞全谷物粉添加量为30%时,面团具有较高的G’(5.3×10^(5) Pa),且tanδ值达到最小值0.50;在此添加量下,鲜湿面条弹性达到最大值(0.97),α-螺旋相对含量最高(28.30%),面条内部的微观结构更加致密均匀。十二烷基硫酸钠-聚丙烯酰胺凝胶电泳结果显示,随甜荞全谷物粉的添加量增加,荞麦蛋白特有的亚基条带也随之加深。与对照组相比,甜荞全谷物粉可使部分紧密结合水向弱结合水和自由水状态迁移,且随添加量的增加,面条L*值显著下降,a*和b*值均不同程度地提高,整体呈红黄色。综上所述,当甜荞全谷物粉添加量为30%时,可赋予鲜湿面条良好的机械性能及加工品质。 展开更多

采用真空-微波辅助半干法处理魔芋葡甘聚糖(konjac glucomannan,KGM)获得不同取代度(degrees of substitution,DS)磷酸魔芋葡甘聚糖酯(konjac glucomannan phosphate ester,KGMPs)。研究KGM和KGMP_(1)(DS 0.046)、KGMP_(2)(DS 0.131)、K... 采用真空-微波辅助半干法处理魔芋葡甘聚糖(konjac glucomannan,KGM)获得不同取代度(degrees of substitution,DS)磷酸魔芋葡甘聚糖酯(konjac glucomannan phosphate ester,KGMPs)。研究KGM和KGMP_(1)(DS 0.046)、KGMP_(2)(DS 0.131)、KGMP_(3)(DS 0.201)分别与卡拉胶复配并添加KCl(KGMPs-KC)加热-冷却形成的热可逆凝胶特性及阴阳离子和蔗糖对KGMP_(3)流变性能的影响。红外光谱分析结果表明,KGMPs与卡拉胶复配并添加KCl协同增效形成凝胶;动态黏弹流变特性结果表明,KGMPs与卡拉胶复配在KCl存在下可形成热可逆凝胶,与KGM相比,随着DS增加,KGMP复配体系形成凝胶温度逐渐降低;质构分析结果表明,28℃贮藏10 d,KGMP_(1)-KC和KGMP_(2)-KC形成凝胶硬度更好;析水性和透光率方面,KGMP_(3)-KC更具优势,适合高透明度果冻类凝胶的制备。KGMP_(3)的黏度和假塑性受到阴阳离子类型和价态的影响,其中NaH_(2)PO_(4)对KGMP溶胶影响最显著,CaCl 2次之;蔗糖能使KGMP的零表观黏度(η0)降低,但随着体系中蔗糖含量的增加,η0增加。该研究为KGMP用于高保水、高透明度、软凝胶型产品的加工提供理论和生产依据。 展开更多

“健康低脂”的食品理念近来广受大众欢迎。为改善低脂凝固型酸奶的凝胶强度低等问题,向酸奶中添加氧化魔芋葡甘露聚糖(Oxidized konjac glucomannan,OKGM)作为脂肪替代物,通过对酸奶理化性质、质构、流变学特性和微观结构等指标的分析... “健康低脂”的食品理念近来广受大众欢迎。为改善低脂凝固型酸奶的凝胶强度低等问题,向酸奶中添加氧化魔芋葡甘露聚糖(Oxidized konjac glucomannan,OKGM)作为脂肪替代物,通过对酸奶理化性质、质构、流变学特性和微观结构等指标的分析,探究不同氧化度OKGM对酸奶品质的影响。结果表明,含高氧化度的OKGM(OK-60、OK-90、OK-120)的酸奶与未添加OKGM的酸奶相比,硬度从375.90 g提高至436.67 g,持水力从28.03%提高至31.89%,同时,能够提高流变学特性中的表观黏度和粘弹性。扫描电镜和激光共聚焦结果显示,高氧化度的OKGM缩小了酸奶凝胶结构间的孔隙,提高了酪蛋白胶束间的聚集,使其平均粒径从88.27 nm增加到125.33 nm。然而,天然的魔芋葡甘露聚糖(Konjac glucomannan,KGM)和低氧化度的OKGM(OK-30)则会降低酸奶的质构、表观黏度和粘弹性,破坏酸奶的凝胶结构,导致其稳定性下降。感官评价结果显示,高氧化度的OKGM使酸奶更有光泽,体系更加均匀,且在滋味上更具优势,这也为健康低脂酸奶的开发奠定了理论基础。 展开更多

为改善乳清分离蛋白凝胶性能并提高其营养特性,将氧化魔芋葡甘露聚糖(oxidized konjac glucomannan,OKGM)与乳清分离蛋白(whey protein isolate,WPI)混合制备复合凝胶,研究OKGM添加量(1%、1.5%、2%、2.5%、3%)对WPI凝胶的持水性、质构... 为改善乳清分离蛋白凝胶性能并提高其营养特性,将氧化魔芋葡甘露聚糖(oxidized konjac glucomannan,OKGM)与乳清分离蛋白(whey protein isolate,WPI)混合制备复合凝胶,研究OKGM添加量(1%、1.5%、2%、2.5%、3%)对WPI凝胶的持水性、质构、流变特性、热稳定性的影响,并对复合凝胶的形成机理进行了初步探讨。结果表明,OKGM的添加使复合凝胶的持水性(65.59%~93.42%)显著高于纯蛋白凝胶(53.58%);质构分析发现OKGM添加量为2%时凝胶的硬度、胶着性、咀嚼性达到最大值;流变分析发现复合凝胶是弱凝胶,对高频率和高温具有更高的依赖性;热重分析表明OKGM添加量≤1.5%时,OKGM-WPI复合凝胶的热稳定性均高于纯乳清分离蛋白凝胶;表面疏水性和游离巯基分析发现OKGM的添加降低了表面疏水性和游离巯基含量,说明OKGM与WPI发生交联和聚集形成复合凝胶;扫描电镜观察发现复合凝胶结构更为致密、有序。综上,可以通过添加OKGM改善WPI凝胶性能及稳定性。 展开更多

为高效获得高质量且适宜加工的糊粉层粉,探究旋风涡流微纳米分离麦麸技术的分离转速和分离筛网孔径对糊粉层粉营养功能成分的影响,利用灰色关联度模型筛选出最佳分离参数,研究0%~30%(以面粉质量计)的糊粉层粉添加量对面粉营养功能成分... 为高效获得高质量且适宜加工的糊粉层粉,探究旋风涡流微纳米分离麦麸技术的分离转速和分离筛网孔径对糊粉层粉营养功能成分的影响,利用灰色关联度模型筛选出最佳分离参数,研究0%~30%(以面粉质量计)的糊粉层粉添加量对面粉营养功能成分、热力学特性、面团的热机械学和动态流变学特性的影响。结果显示,糊粉层粉的最佳分离条件为4 000 r/min和80目,此条件下获得的糊粉层粉得率高,富含粗蛋白、总膳食纤维和烷基间苯二酚。当糊粉层粉添加量从0%增加至30%时,面粉中的水分和淀粉含量不断下降,面粉中灰分、粗蛋白、总膳食纤维、粗脂肪、总酚和烷基间苯二酚含量不断上升,而且能提高面粉的糊化稳定性和黏弹性,延缓面团老化回生,使其具有良好的加工性能。本研究有利于最大化开发糊粉层粉营养功能,提高其加工性能,促进小麦副产物的资源利用。 展开更多

为了进一步筛选和培育优异制曲专用小麦品种和种质,选用目前被白酒企业广泛使用的制曲专用小麦荃麦725、皖恳麦9号、烟农999、龙科1109、华成1688、泛麦5号共6个品种,以及谷神19、涡麦19、涡麦303、皖宿21共4个非制曲小麦品种,通过测定... 为了进一步筛选和培育优异制曲专用小麦品种和种质,选用目前被白酒企业广泛使用的制曲专用小麦荃麦725、皖恳麦9号、烟农999、龙科1109、华成1688、泛麦5号共6个品种,以及谷神19、涡麦19、涡麦303、皖宿21共4个非制曲小麦品种,通过测定蛋白质和淀粉的理化特性、面筋特性和粉质参数等指标,分析了制曲专用小麦在面粉和面团流变学特性中的共同特征。结果表明,制曲小麦总淀粉含量高于59%,其中支链淀粉含量高于65%,直链淀粉含量低于30%;在淀粉糊化特性中,制曲小麦的高峰粘度高于2500 mPa·s,低谷粘度高于2000 mPa·s,稀懈值高于400 mPa·s,最终粘度高于1600 mPa·s,反弹值高于1300 mPa·s;制曲小麦谷蛋白含量低于4.00%,湿面筋含量低于30%,面筋指数低于80%,吸水率低于65%。 展开更多

为改善萌芽藜麦生粉的特性,探讨不同热处理方式(炒制、挤压膨化、热风)对萌芽藜麦粉的色度、溶解性、糊化特性、糊化度、动态流变及其体外血糖生成指数的影响。结果表明,热处理萌芽藜麦粉的亮度值较萌芽藜麦生粉显著降低(P<0.05),炒... 为改善萌芽藜麦生粉的特性,探讨不同热处理方式(炒制、挤压膨化、热风)对萌芽藜麦粉的色度、溶解性、糊化特性、糊化度、动态流变及其体外血糖生成指数的影响。结果表明,热处理萌芽藜麦粉的亮度值较萌芽藜麦生粉显著降低(P<0.05),炒制粉、挤压膨化粉和热风处理粉的色差值分别为4.1、17.0和8.0;热处理粉的水溶性指数、峰值黏度、回生值较萌芽藜麦生粉显著提高(P<0.05),而衰减值、吸水性指数则显著降低;3种热处理粉中,挤压膨化粉的水溶性指数、黏度值、衰减值和回生值显著低于炒制粉和热风处理粉,但其糊化度最高,达到84.0%;萌芽藜麦生粉及热处理粉均表现为弱凝胶特性。挤压膨化萌芽藜麦粉的体外血糖生成指数(50.78)显著低于生粉(52.11)、热风处理粉(52.21)、炒制粉(52.92)。挤压膨化处理可有效提高萌芽藜麦粉的糊化度,降低产品的黏度和血糖指数,是开发具有良好加工特性与消化特性萌芽藜麦粉的适宜热处理方法。 展开更多

为提高无麸质蛋糕的品质,通过测定不同藜麦粉添加量的面糊的流变特性和密度;蛋糕的比容、烘焙损失率、色差、感官评分以及贮藏7 d后蛋糕的质构特性、水分分布和老化焓值等指标,探究藜麦粉对无麸质面糊特性及蛋糕品质的影响。结果表明,... 为提高无麸质蛋糕的品质,通过测定不同藜麦粉添加量的面糊的流变特性和密度;蛋糕的比容、烘焙损失率、色差、感官评分以及贮藏7 d后蛋糕的质构特性、水分分布和老化焓值等指标,探究藜麦粉对无麸质面糊特性及蛋糕品质的影响。结果表明,面糊的弹性模量(G′)、黏性模量(G″)和密度与藜麦粉添加量呈正相关,进而增大了蛋糕比容并降低烘焙损失率,蛋糕气孔分布更加均匀。高比例的藜麦粉(30%~50%)能有效延缓蛋糕的老化。在贮藏7 d后,对照组和50%藜麦粉老化焓值分别增加至1.42 J/g和0.92 J/g。综上,添加藜麦粉能够显著提高面糊的流变特性和蛋糕的烘焙特性,延缓蛋糕老化。综合蛋糕感官评分和老化特性,藜麦粉添加量为30%时较为适宜,可以赋予无麸质海绵蛋糕更好的品质。 展开更多
