Identification of Antioxidant Additives in Food Products Sold in Dakar Markets

The use of food additives in industrial production has the advantage of improving sensory properties, technological quality and extending the shelf life of foods. Among the most widely used additives are antioxidants, which prevent oxidation, browning and rancidity reactions in foods. However, the strong presence of these additives on the market is not without risks for human health, and should be controlled to guarantee food safety. Analysis of the risks associated with consumption of foods containing these additives requires, among other things, information on the frequency of use of these additives in various consumer products. The aim of this study is therefore to identify the antioxidants present in industrial food products distributed in Dakar. The methodology adopted consists of a qualitative analysis based on the identification of additives from food labels. Investigations were carried out in 9 stores, 4 superettes and 2 supermarkets located in different districts of Dakar. The results revealed the presence of 12 antioxidant additives, dominated by citric acid (53%) and ascorbic acid (29%). These studies have also highlighted the simultaneous use of several antioxidants in the same food product. Moreover, for some artificial antioxidants identified antioxydant such as BHA and BHT, health risks are associated with their consumption. The results of this study open up prospects for the development of information databases on food additives. 展开更多

Various land use and land cover(LULC)products have been produced over the past decade with the development of remote sensing technology.Despite the differences in LULC classification schemes,there is a lack of research on assessing the accuracy of their application to croplands in a unified framework.Thus,this study evaluated the spatial and area accuracies of cropland classification for four commonly used global LULC products(i.e.,MCD12Q1V6,GlobCover2009,FROM-GLC and GlobeLand30)based on the harmonised FAO criterion,and quantified the relationships between four factors(i.e.,slope,elevation,field size and crop system)and cropland classification agreement.The validation results indicated that MCD12Q1 and GlobeLand30 performed well in cropland classification regarding spatial consistency,with overall accuracies of 94.90 and 93.52%,respectively.The FROMGLC showed the worst performance,with an overall accuracy of 83.17%.Overlaying the cropland generated by the four global LULC products,we found the proportions of complete agreement and disagreement were 15.51 and 44.72% for the cropland classification,respectively.High consistency was mainly observed in the Northeast China Plain,the Huang-Huai-Hai Plain and the northern part of the Middle-lower Yangtze Plain,China.In contrast,low consistency was detected primarily on the eastern edge of the northern and semiarid region,the Yunnan-Guizhou Plateau and southern China.Field size was the most important factor for mapping cropland.For area accuracy,compared with China Statistical Yearbook data at the provincial scale,the accuracies of different products in descending order were:GlobeLand30,FROM-GLC,MCD12Q1,and GlobCover2009.The cropland classification schemes mainly caused large area deviations among the four products,and they also resulted in the different ranks of spatial accuracy and area accuracy among the four products.Our results can provide valuable suggestions for selecting cropland products at the national or provincial scale and help cropland mapping and reconstruction,which is essential for food security and crop management,so they can also contribute to achieving the Sustainable Development Goals issued by the United Nations. 展开更多

Mountain farming provides high-quality food products due to the peculiar characteristics of the raw materials combined with traditional processing conditions. However, these products and their intrinsic characteristics are not clearly recognized by consumers on the market. Nowadays, Protected Designation of Origin(PDO), Protected Geographical Indication(PGI) and Traditional Specialities Guaranteed(TSG) certifications include products originating in mountain areas, even if a large part of mountain foodstuff is not protected by these certifications and foods not made in mountain areas are often labeled as ―mountain food products‖. For this reason, the European Union has set a specific Regulation in 2012 to recognize and protect mountain food and to make the consumers safer about the origin information. The objective of this paper is twofold: firstly, it presents the recent aspects related to European legislation of mountain food product; secondly, it aims at reviewing the main features of nutritional quality and technology of dairy and meat products, as the most widespread mountain food products, and the main protocols used to evaluate the authenticity of these food products. The promotion of mountain food product through a specific label and the use of tracing methods, which are able to verify the authenticity of the origin of these products, may play a pivotal role in increasing the consumer‘s loyalty towards these products and could be a way to boost a sustainable development of these economically marginal rural areas. However, the analytical protocols developed so far(stable isotopes, macro and microelements, radionuclides, spectroscopic, molecular techniques, volatile substances profile, terpenes) are in many cases still at the experimental level due to the extreme variability of the mountain origin of the products to be tested. 展开更多

Development of a Functional Food Snack Product Utilizing Underexplored and Underutilized Ingredients: Spirulina Microalgae and Bilberry

Spirulina, a protein-rich cyanobacterium, and Bilberry, a dark berry, have the potential to be used as functional food ingredients in the food industry. These two underexplored and underutilized ingredients were used to develop an adolescent-friendly functional snack food product in the light of food industry trends. Stages of product development, shelf life/physiochemical analysis (texture, pH, color, and water activity) and sensory evaluation were utilized in developing a functional snack mini muffin containing Spirulina and Bilberry. Aqueous (AQ) and 80% ethanol (ET) extracts of mini muffin formulations (chocolate, 1% Spirulina (S) + 4% Bilberry (B), 2% Spirulina (S) + 8% Bilberry (B)) were prepared using a standard protocol. Antioxidant potential was determined using 2,2-diphenyl-1-picrylhydrazyl (DPPH) and Ferric Reducing Antioxidant Potential (FRAP) assays. Utilizing a 5-point hedonic scale (1—Dislike very much, 2—Dislike a little, 3—Neither like nor dislike, 4—Like a little, 5—Like very much), 3 mini muffin formulations (chocolate, 1% S + 4% B, 2% S +8% B), were tested among consumer panelists, with 1% S + 4% B being the most acceptable based on taste, texture, color, aroma, appearance, etc. Texture (post-peak (N) of the mini muffin did not vary between chocolate and 1 S% + 4% B formulations;however, 2% S + 8% B was 1.09 times higher compared to its counterparts. pH, color, and water activity remained constant over the 9-day shelf-life period. The Spirulina and Bilberry muffins developed exhibited antioxidant activities (highest in 2% S + 8% B), and were accepted by the sensory panelists for color, taste, mouthfeel, and aroma (panelists preferred 1% S + 4% B). 展开更多

H. pylori that establishes life-long infection in the stomach is definitely associated with gastro-duodenal diseases and a wide variety of non-gastrointestinal tract conditions such as immune thrombocytopenia. Triple therapy which consists of a proton pump inhibitor and combinations of two antibiotics (amoxicillin, clarithromycin or amoxicillin, metronidazol) is commonly used for H. pylori eradication. Recently, the occurrence of drug-resistant H. pylori and the adverse effect of antibiotics have severely weakened eradication therapy. Generally antibiotics induce the disturbance of human gastrointestinal microflora. Furthermore, there are inappropriate cases of triple therapy such as allergy to antibiotics, severe complications (liver and/or kidney dysfunction), the aged and people who reject the triple therapy. These prompt us to seek alterative agents instead of antibiotics and to develop more effective and safe therapy with these agents. The combination of these agents actually may result in lower a dose of antibiotics. There are many reports world-wide that non-antibiotic substances from natural products potentially have an anti-H. pylori agent. We briefly review the constituents derived from nature that fight against H. pylori in the literature with our studies. 展开更多

Drying is an important unit operation in processing of biological resources. The drying process may influence the product properties and quality, which may shrink, break or undergo rheological, physical and biochemical changes. The important parameters responsible for such changes are drying conditions, type of drying technology and residence drying time. Thermal conductivity, thermal-mass diffusivity, enthalpy, porosity and density are the main material property and heat-mass transfer parameters, which are essential for understanding the changes in product quality and for designing and dimensioning the drying processes. In this paper physical properties of food products undergoing a combined sublimation and evaporation were studied. Pieces of vegetables and potatoes were dried in a heat pump fluidized bed dryer at combined modes with temperatures below the freezing point in the beginning and a final drying step at temperatures above the freezing point. Samples of products were tested at different moisture contents with respect to physical properties. Physical properties of leek and potato samples were measured and mass diffusivities were determined from drying kinetic data. Based on bulk density and rehydration measurements it was clearly observed that drying temperature and modes influenced the final product physical properties. The potato cube run dried with initial atmospheric freeze-drying step had rehydration ability 430%above a run dried only above the freezing point. The average effective mass diffusivity for 5 mm slabs of leek was 0.5 x 10-11m2·s-1 for the sublimation stage and 2.2 x 10-11m2·s-1 for the evaporation stage. 展开更多

In this study,we developed a simple screening procedure for the determination of 18 anthelmintics(including benzimidazoles,macrocyclic lactones,salicylanilides,substituted phenols,tetrahydropyrimidines,and imidazothiazoles)in five animal-derived food matrices(chicken muscle,pork,beef,milk,and egg)using liquid chromatography-tandem mass spectrometry.Analytes were extracted using acetonitrile/1% acetic acid(milk and egg)and acetonitrile/1% acetic acid with 0.5 mL of distilled water(chicken muscle,pork,and beef),and purified using saturated n-hexane/acetonitrile.A reversed-phase analytical column and a mobile phase consisting of(A)10 mM ammonium formate in distilled water and(B)methanol were used to achieve optimal chromatographic separation.Matrix-matched standard calibration curves(R^(2)≥0.9752)were obtained for concentration equivalent to ×1/2,×1,×2,×3,×4,and×5 fold the maximum residue limit(MRL)stipulated by the Korean Ministry of Food and Drug Safety.Recoveries of 61.2e118.4%,with relative standard deviations(RSDs)of ≤19.9%(intraday and interday),were obtained for each sample at three spiking concentrations(×1/2,×1,and ×2 the MRL values).Limits of detection,limits of quantification,and matrix effects were 0.02e5.5 mg/kg,0.06e10 mg/kg,and -98.8 to 13.9%(at 20 μg/kg),respectively.In five samples of each food matrix(chicken muscle,pork,beef,milk,and egg)purchased from large retailers in Seoul that were tested,none of the target analytes were detected.It has therefore been shown that this protocol is adaptable,accurate,and precise for the quantification of anthelmintic residues in foods of animal origin. 展开更多

The only treatment for CD is a strict, lifelong gluten-free diet. With a prevalence rate of about one in 100-133 people worldwide. Celiac disease is wide-spread across the globe. Unlike traditional allergies, which cause immediate reactions, gluten sensitivity is harder to pin down since it manifests gradually and in various forms like headaches, stomach cramps, bloating, anxiety, and depression. Due to complicated diagnosis procedure and lack of awareness, many cases are either misdiagnosed or not at all diagnosed in India and USA. In spite of high growth, gluten-free foods are facing problems to grain ground in Asian market, due to high price, lack of awareness about the products, large number of un-diagnosed cases and inefficient value chain for gluten-free products. One of the major issues in India and USA is very high prices of gluten-free foods as compared to regular food products. Globally, the market potential of gluten free products is estimated to be USD 4639.13 Million and USD 7594.43 Million in 2015 and 2020 respectively. The global gluten free food market is projected to grow with a CAGR between 9 percent and 10.2 percent during 2016-2022. The study on consumer preference of gluten-free foods would enable manufacturers of gluten-free foods to understand the current and evolving expectations of consumers and to design the products according. Study of two countries i.e., India and USA would enable manufacturers to understand the difference in choices and preferences related to gluten-free foods for both the nations. This study would help manufacturers of alternative wheat product to form the concrete marketing and product development strategy based on recent consumer behavior trends. 展开更多

Enhancing the Hygienic Quality of Some Ghanaian Food Products by Gamma Irradiation

The microbial load was estimated by the total viable count (TVC) and moulds and yeasts count (MYC). The range of TVC and MYC of the un-irradiated products were 103 cfu/g - 106 cfu/g and 0 cfu/g - 106 cfu/g respectively. Un-irradiated Banku Mix Powder, Fermented Maize Powder and Cassava Dough Powder had relatively low microbial load (TVC ? 6.1 × 103 cfu/g;MYC ? 4.9 × 102 cfu/g). Un-irradiated Fermented Maize Dough, Kokonte Powder and Cassava Dough had relatively high TVC of >106 cfu/g. Eleven and 3 microbial isolates were detected in the un-irradiated and irradiated products respectively and the most common were Aspergillus niger and Bacillus spp. Irradiation dose of 10 kGy eliminated all microorganisms from the products. Doses of 5 and 7.5 kGy reduced the microbial loads of the products by approximately 1 to 6 log cycles to meet national and international standards. The use of low dose gamma radiation by the local food industry could improve the hygienic quality, extend shelf-life and enhance the competitiveness of the Ghanaian food products in domestic and export markets. 展开更多

The use of Fresh Cut Products (FCP) allows food service units to offer a greater variety of menus, reducing costs and minimizing cross contamination. Few food units in Portugal are adopting FCP, since these products are viewed as being more expensiveand are regarded as less natural and easily perishable.The present study aims to identify and analyze the level of awareness of food service operators in respect to FCP. Approximately 90% of food handlers referred the use of FCP at their workplace, pointing as the main advantages for using them the less time spent on preparation (58.6%), the variety (55.9%) and the convenience (55.9%). Reasons for not using them were doubtful origin (91.7%), price (66.7%) and being a possible threat to their jobs (58.3%). In spite of recognizing the advantages of using FCP, most of food handlers (77.2%) prefer traditional products. Traditional products were preferred by food handlers with lower educational level, working at schools and performing functions of kitchen helper. FCP were chosen by younger food handlers, with higher educational level. It seems necessary to promote a demystification of this category of products near food service managers and employees, explaining the best way and advantages of using FCP at institutional food services in terms of safety, cost and quality. 展开更多

Trends of Laboratory-Detected Heavy Metals in Children: Solutions for Heavy Metal Contamination in Infant Food Products

In 2019, an investigation by the U.S. House of Representatives revealed major infant food conglomerates had products with high levels of arsenic, lead, cadmium, and mercury, posing concerns for infants’ vulnerability to the neurotoxic effects of these metals. Trends of laboratory-detected heavy metals were analyzed in children aged zero to five from 1999-2020, providing insights on heavy metal contamination in infant food products. Utilizing National Health and Nutrition Examination Survey (NHANES) data, mean heavy metal levels in children were calculated, considering gender, race, and income-to-poverty ratio as proxies for assessing associations with increasing heavy metal rates in infant food. Findings indicated an overall decrease in mean concentrations over time, though remaining elevated. Black children exhibited higher lead levels than the overall average, while the Asian subgroup displayed higher levels of total blood mercury and cadmium levels. Lack of internal standards in regulatory bodies, particularly the FDA, exacerbates the issue, with no legally enforceable guidelines or strict maximum levels for heavy metals in infant foods. Urgent FDA interventions are needed, addressing contamination at the sources of raw materials, implementing transparent and extensive product testing, and comprehensive manufacturer labeling to inform consumers about elevated heavy metal levels in infant products. 展开更多

This paper discusses how India and Association of Southeast Asian Nations (ASEAN) countries can increase their trade in organic food products. With rise in demand for organic food products globally, India and select ASEAN member countries have become key producers and exporters of organic food products. Trade in organic food products is governed by regulations, standards, certification and accreditation procedures, which enables differentiation of organic products from conventional products. Organic standards ensure premium price for the farmers and producers, while consumers are assured of authenticity of the product. Standards can act as a barrier to trade as regulations governing organic food products can vary across countries. Some countries are also in process of developing regulations. This paper discusses the role of different multilateral agencies in designing standards and how countries can address issues of difference in standards by signing unilateral and bilateral equivalence arrangements, trade agreements and harmonizing their standards within regional groups. It also discusses how India and ASEAN countries can align their domestic regulations in line with the global best practices so that they can sign equivalence arrangements to enhance their exports. The paper concludes that measures such as coming up with a comprehensive definition of "organic", having a uniform standard for organic products encompassing domestic market and trade, having a single nodal agency for both domestic market and exports, developing organic clusters and reducing the cost of third-party certification will help enhance trade in India and ASEAN, and enable these countries to access third country markets. 展开更多

The market of organic food products has a continuous upward trend though the growth rate and sale channels in individual countries are rather different. This research aims to identify the key factors that influence consumers' choice to buy organic food products in Lithuania focusing on the consumer trust in the quality and the most acceptable marketing channels. In order to get the necessary information, the residents of Vilnius (the capital of Lithuania), as having the greatest potential for the organic food market in the country, were interviewed. The analysis of collected data was done using the methods of mathematical statistics and comparison of relative frequencies. The results of this research prove the increasing consumers' interest in organic food products. The majority of consumers consider these products to be healthier, better-tasting and fresher. Only about a third of the purchasers (usually buying frequently) can see differences between organic and non-organic products, therefore, there is a problem to distinguish organic food from conventional products and, consequently, remains a possibility to cheat the consumer. An additional quality control and direct sales from known and familiar farmers might increase trust in the quality of organic food products. So far, supermarkets are the most important place to buy organic foods, however, the greater consumer confidence in the quality of organic products bought at farmers' markets and the acceptance of the majority of purchasers to buy organic food products directly from the farmers suppose the need to develop a direct marketing system. 展开更多

Packaging is one of the most important methods of keeping the quality of food products for storage, transportation and end-use. The price of materials employed for packaging food has traditionally been high and used to be more expensive than the food itself. Technological innovations made possible to produce packaging materials cheaply. One of these processes is known as co-extrusion. This technique makes a film with two or more layers with different plastics not laminating the layers together with an adhesive, eliminating the use of solvents and producing a film in just one step instead multiple steps. In this background, our paper relates to the evolution on packaging for foods by using patenting documents. A search for patent documents was performed on free patent databases using keywords and International Patent Classification (IPC) codes related to this technology. As results: (a) 17% of the 21,472 documents found are focused on multilayer packaging for food; (b) 12 countries hold more than 90% of patents (38% Japan; 23% The United States of America; 7% Canada and 6% Germany); and, (c) two peaks were perceived in the period of 1992-1994 and 2003, and matches, respectively, the Persian Gulf (1990-1991) and Iraq Wars (2003-invasion of Iraq), so the historical tendency is confirmed: "wars also generate scientific and technological innovations". 展开更多
