[Objectives]Protein energy ratio refers to the proportional relationship between protein and energy levels in animal diets,i.e.,the grams of crude protein corresponding to every megacalorie of energy,which is generall...[Objectives]Protein energy ratio refers to the proportional relationship between protein and energy levels in animal diets,i.e.,the grams of crude protein corresponding to every megacalorie of energy,which is generally expressed as CP:ME or CP:DE.This study was conducted to investigate the effects of different diets on fattening and slaughter performance and meat quality traits for"L(Large Yorkshire)×L(Landrace)"crossbred pigs.[Methods]Eighteen piglets of L×L crossbred with similar body weights about 51 kg were selected.The piglets were divided into 3 groups randomly and each group was assigned to 3 replicates with 2 piglets in a replicate.Group A was fed diet Ⅰ (control diet),group B was fed the same diet of group A in the first month of the trial but fed diet Ⅱ in second month,and group C consumed diet Ⅲ.All the pigs were fed in the same feeding condition for two months except the different diets during the trial.One pig in similar body weight from each replicate was slaughtered for the determination of slaughter performance and meat quality traits in the end of the trial.[Results]The average daily feed intake(ADFI)of pigs from group B was only(2.32±0.52)kg and significantly lower than those from group A and group C(P<0.05),but no difference was found in average daily gain(ADG) and feed/gain(P>0.05).Also,no differences occurred in the carcass length,back fat thickness,longissimus muscle (LM) area and dressing percentage(P>0.05).In addition,no differences were found in the meat quality traits of shear force,meat color,pH_(45 min),pH_(24 h) and cooking loss(P>0.05).However,the water-holding capacity of meat from group C was(2.58±0.02)ms and significantly lower than that of(2.80±0.20)ms from group A(P<0.05).Although the contents of glutamic acid and cystine in LM from group B was significantly lower than those from group A and group C(P<0.05),no differences occurred in the contents of other amino acids,the total amino acid and total flavor amino acid among the three groups(P>0.05).However,the inosine monophosphate content of LM from group C was only(331.80±11.53)mg/100 g and significantly lower than those of(361.00±6.36)and(366.37±4.80)mg/100 g from group A and B(P<0.05).Even though no differences were found in the contents of DM and CP in LM among the three groups of pigs,the content of intramuscular fat(IMF)in LM from group B and group C was increased by 45.6%and 46.58%respectively from that of group A(P<0.05),but no difference occurred between group B and C(P>0.05).[Conclusions]DietsⅡ and Ⅲ in this study caused no differences in fattening and slaughter performance of L×L crossbred pigs,but the effects on some meat traits were still significant,especially on the improvement of intramuscular fat in experimental pigs.Therefore,they could improve the meat quality of crossbred pigs to a certain extent.展开更多

[Methods] Ninety two four-month-old Tan sheep were randomly divided into two treatment groups according to their body weight, 46 in each group. The control check group(CK) was feed with conventional diet, and the experimental group was fed with the addition of antimicrobial peptide on the basis of the conventional diet, with the added amount of 2.5 g/sheep per day. The experimental period was 60 d. [Results] The incidence rate was 75.06% lower in the experimental group than in the CK. The average daily weight gain per sheep was 11.27% higher in the experimental group than in the CK(P<0.05). The feed conversion ratio was 8.45% lower in the experimental group than in the CK(P<0.05). The average daily gross profit per sheep was 12.12% higher in the experimental group than in the CK. For slaughter performance, the data difference of each item was not significant. The PH at 45 min and 24 h after slaughter was within the normal range of fresh mutton. The cooked meat percentage and water loss rate showed no significant differences(P>0.05). The marbling ranged from 2.45 to 2.50, indicating that the fat content was moderate, and the difference between groups was not significant(P>0.05). The flesh color ranged from 3.00 to 3.15, between light red and bright red, belonging to the normal color of mutton, and the difference between groups was not significant(P>0.05). The shear force was between 2.50 and 2.65, without a significant difference between groups(P>0.05). The white blood cells, lymphocytes and platelets in the experimental group were lower than those in the CK(P<0.01). The erythrocytes and hemoglobin in the erythrocyte group were higher than those in the CK(P<0.05). The neutrophils and monocytes in the experimental group were lower than those in the CK(P<0.05). [Conclusions] This study provides a technical basis for the rational use of antimicrobial peptides and their application in ruminants.展开更多
[Objectives]The study aims to discuss the effects of addition of arginine and glutamic acid or soybean phospholipid,vitamin E and yeast selenium in diet on the slaughter performance and meat quality of long(white)...[Objectives]The study aims to discuss the effects of addition of arginine and glutamic acid or soybean phospholipid,vitamin E and yeast selenium in diet on the slaughter performance and meat quality of long(white)×large(York)binary hybrid pigs.[Methods]27 long×large castrated hybrid boars with the body weight of(54.4±0.15)kg were randomly divided into 3 groups,with 3 replicates per group and 3 pigs per replicate.Group A was the control group,in which the pigs were fed basal diet;in group B,0.8%arginine and 0.60%glutamate were added to the basal diet;in group C,75 g of soybean phospholipid,20 g of vitamin E and 8 g of yeast selenium were added to every 100 kg of the basal diet.The trial period was 60 d.After the experiment was ended,one test pig with similar body weight was selected from each replicate for slaughter and meat determination.[Results]The average weight gain and eye muscle area of the pigs in group B were significantly higher than those in group C(P<0.05),and also showed an increasing trend compared with group A,but there was no statistically significant difference(P>0.05);there was no significant difference between group B or C and group A in the average weight gain and eye muscle area(P>0.05).There was no significant difference in other slaughter performance between the three groups(P>0.05).Besides,there was also no significant difference in the content of various amino acids,total amino acids and total umami amino acids between the three groups(P>0.05).The inosine content in the longissimus dorsi muscle and muscle cooking loss of binary hybrid pigs in group C were significantly better than those in group B(P<0.05),and also had a tendency to be better than those in group A,but there was no significant difference(P>0.05);there was no significant difference between group B or C and group A in the inosine content and muscle cooking loss of the pigs(P>0.05).In addition,there was no significant difference in other meat traits and chemical composition of the longissimus dorsi muscle between group B or C and group A(P>0.05).[Conclusions]The addition of arginine and glutamic acid or soybean phospholipid,vitamin E and yeast selenium in diet had no significant effect on the growth rate,slaughter performance and meat traits of long×large binary hybrid pigs.展开更多

Pigs in control group were fed with conventional diets, and 4% microbial fermentation feeds were added to the basal diet of experimental group to research on the effect of performance and meat quality of pig breeding. The results indicated that after feeding 106 d, compared to control group, the slaughter performance, meat quality and content of fatty acid and amino acid of experimental group were all better, its slaughter rate increased 1.53%, the carcass weight increased 2.75% and the backfat thickness decreased 0.02 cm. In addition, the pork meat in test group hadn't antibiotic and heavy metal residues, while it had higher color score, lower pH45min and pH24h value, better tenderness and rate of cooked meat and higher content of fatty acids, polyunsaturated fatty acids and amino acids. Microbial fermentation feed using in test group can significantly improved the flavor and aroma of pork, and eating this pork conducive more to human health. Thus, the application of microbial fermenta- tion feed can provide a more safe, healthy and nutritious flavor pork for human beings.展开更多

[Method] The slaughter performance such as live chicken weight, carcass weight, semi-eviscerated weight, eviscerated weight, chest muscle weight, leg mus-cle weight, abdominal fat weight and the meat quality indices like color, pH and shear force of 12-week-old frizzle chickens were measured to analyze the correla-tion between slaughter performance and meat quality. [Result] The carcass percent-age, semi-eviscerated percentage, eviscerated percentage, chest muscle percentage, leg muscle percentage, abdominal fat percentage, intramuscular fat width and subcu-taneous fat thickness of the male chickens were 89.76%, 81.54%, 67.53%, 7.82%, 11.29%, 2.42%, 0.69 cm and 0.48 cm, of female chickens were 89.78%, 80.87%, 62.94%, 6.19%, 9.92%, 3.91%, 0.78 cm and 0.61 cm. Some of these traits exhibit-ed significant difference between the male and female chickens (P〈0.05). In male chickens, the chest muscle color, pH and shear force were 5.93, 6.15 and 3.72 kg, and the leg muscle color, pH and shear force were 6.18, 6.54 and 3.41 kg; in fe-male chickens, the chest muscle color, pH and shear force were 5.77, 6.05 and 3.41 kg, and the leg muscle color, pH and shear force were 6.03, 6.21 and 2.74 kg. The quality of chest and leg muscles of frizzle chickens significantly differed (P〈0.05). Carcass weight had significant positive correlations with semi-eviscerated weight and meat color (P〈0.05), and an extremely significant positive correlation with pH (P〈0.01). Semi-eviscerated weight and pH value shared a significant posi-tive correlation (P〈0.05). Eviscerated weight and leg muscle weight shared an ex-tremely significant negative correlation (P〈0.01). Abdominal fat weight correlated sig-nificantly and negatively with shear force (P〈0.05). Meat color and pH value had a significant positive correlation (P〈0.05). [Conclusion] This study provides theoretical basis for the breeding of excellent chicken varieties producing high-quality meat.展开更多

[Result] The body weights of males and females before slaughter were (20.16±1.26) and (19.33±4.86) kg, respectively; the dressing percentages of males and females were (43.86±1.74)% and (44.08±5.46)%, respectively; the meat percentages were (32.43± 1.52)% and (32.72±3.97)%, respectively; and the meat production rates of carcass were (73.28±0.09)% and (73.16±0.85)%, respectively. There were less differences in carcass measurements, carcass segmentation, muscle quality, muscle fiber charac- teristics, muscle nutritional components, muscle mineral contents and heavy metal contents between males and females, while eye muscle area and hind leg meat weight of males were significantly higher than those of females. In muscles of males and females, 18 amino acids were detected totally, EAA/TAA values were (39.23±0.24)% and (38.70±0.15)%, respectively, and EAA/NEAA values were (64.73± 0.65)% and (63.17±0.41)%, respectively. [Conclusion] This study lays a foundation for overall understanding of germplasm characteristics of Tibetan goats.展开更多

There were smal differences in car-cass size, carcass segmentation, muscle fiber properties, muscle quality, muscle nu-tritional composition, muscle minerals contents and muscle heavy metals contents between male and female Tibetan goats. A total of 18 kinds of amino acids were detected in the muscle of male and female Tibetan goats. The carcass length, carcass hind leg circumstance, carcass hind leg length, lumbar muscle thickness, hind leg meat yield, shoulder muscle yield and breast meat yield of male goats were significantly higher than those of female goats (P〈0.05), and no significant differenceswere found in other carcass size and carcass segmentation indices between male and female goats (P〉0.05). There were small differences in muscle fiber properties, muscle quality, muscle nutritional composition, muscle mineral content and muscle heavy metal content between male and female goats (P〈0.05). A total of 18 kinds of amino acids were detected in the male and female goats. [ Method ] Totally 400 3-day-old Sichuan white geese were randomly divided into four groups ; geese in control group were fed with the fundamental diet ; geese in group 1, group 2 and group 3 were fed with the fundamental diet containing 5%, 10% and 10% rapeseed straw instead of equal amount of wheat bran, respectively. The body weight and slaughter performance of Sichuan white geese in control group, group 1 and group 2 were determined at 10 weeks of age, while those in group 3 were determined at 14 weeks of age. [ Result] There was no significant difference in gross weight, slaughter weight, eviscerated weight with giblet, head weight, sole weight, wing weight, neck weight, muscular stomach weight and intestine indexes of 10-week-old white geese between group 1 and control group, and between group 2 and con- trol group ( P 〉 0.05 ) ; the live weight slightly decreased. The growth and slaughter performance of 14-week-old Sichuan white geese were significantly higher fllan that of 10-week-old geese (P 〈0.05), with better meat and flavor, but relatively low average daily gain (P 〈0.05 ) ; there was no significant impact on muscular stomach pH and intestinal pH (P 〉 0.05 ). [Method] A total of five goose breeds including Taihu goose (T), Wulong goose (WL), Wanxi white goose (WX), Sichuan white goose (SC) and Sanhua goose (SH) were used as research objects, and eight crossbred combinations were designed. The body measurements, slaughter performance, conventional meat quality and muscle composition of 90-day-old geese in eight crossbred combinations were determined and comparatively analyzed. [ Result] All the body measurement indexes except thud width of WXSC combination were the biggest in the eight crossbred combinations. Contrarily, the body measurement indexes of SHSC combination, including average body weight, body slope length, breast depth, breast width, shank length, neck length and half-diving depth were the lowest in the eight crossbred combinations. The live weight, slaughter weight and abdomen fat weight of WXSC combinations ware 3 291.36, 2 956.46 and 77.84 g, respectively, which were the biggest in eight crossbred combinations. The slaughter rate of SHWL combinations was 92.96%, and more than other crossbred combinations. The shear force of SHT and WXWL combinations were the lowest (3.09 kg) and the highest (3.78 kg), respectively. The water holding capacities of SCWL and WXSC combinations were the highest (66.46%) and the lowest (61.48%), respectively. The percentage of moisture content of SHWL and SCT combinations were the highest (73.05%) and the lowest (66.77%), respectively. The crude protein content of SHT and SHWL combinations were the highest (23.32%) and the lowest (21.94%), respectively. The percentage of crude fat content of SHT and SCWL combinations were the highest (3.06%) and the lowest (1.67%), respectively. [ Concusion] The growth rate of WXSC combination is the fastest, and the meat performance of SHT combination is the best.展开更多

The results showed that body length,keel length and shank length of male F1 hybrid offspring were significantly higher than those of female chickens(P 【 0. 05). The live weight,carcass weight,semi-eviscerated weight,semi-eviscerated ratio,eviscerated weight,chest muscle weight,the leg muscle weight and heart weight of male chickens were extremely significantly higher than that of female chickens(P 【 0. 01),and the leg muscle ratio and wings weight were significantly higher than that of female chickens(P 【 0. 05),but sebum thickness of male chickens was extremely significantly lower than that of female chickens(P 【 0. 01). Other indicators failed to reach the significant difference level. There were extremely significant or significant correlations between the slaughter performance and body size in F1 hybrid offspring. The regression equations between different indicators were identified and developed. The results provided a certain theoretical reference to predict slaughter performance indicators through a living body size measurement,and revealed an improved production performance of F1 hybrid offspring.展开更多

[Objective]The paper was to study the effects of amino acid or Fulibao nutritional additives on slaughter performance and pork quality of pigs,and to provide a theoretical basis for improving pork quality in pig breed...[Objective]The paper was to study the effects of amino acid or Fulibao nutritional additives on slaughter performance and pork quality of pigs,and to provide a theoretical basis for improving pork quality in pig breeding industry.[Method]Six Landrace×Yorkshire castrated male piglets were divided into three groups.The piglets in the first group were fed with conventional diet and used as the control.The piglets in the experimental group I were fed with the conventional diet supplementing 0.1%Fulibao,and those in the experimental group II were fed with the conventional diet supplementing 0.36%compound amino acid preparation.The piglets were reared for 2 months before being slaughtered.[Result]The average daily gains of piglets in the experimental groups I and II were 17.7%and 6.73%higher than that in the control group,but there was no difference in feed/gain ratio among the three groups.The dressing percentages of piglets in the experimental groups I and II were 2.7%and 1.72%higher than that in the control group,and the lean meat percentages were 3.5%and 7.97%higher than that in the control group,respectively.The meat fat ratios in the two experimental groups were significantly higher than that in the control group.The intermuscular fat in the experimental group II was significantly higher than that in the control group.However,the contents of intermuscular fat and inosinic acid in the experimental group II were significantly lower than those in the control group.[Conclusion]Both additives can improve the average daily gain and main slaughter performance of pigs,but can not improve the inosine acid content,and the compound amino acid preparation can not improve the intermuscular fat content.展开更多

文摘[Objectives]Protein energy ratio refers to the proportional relationship between protein and energy levels in animal diets,i.e.,the grams of crude protein corresponding to every megacalorie of energy,which is generally expressed as CP:ME or CP:DE.This study was conducted to investigate the effects of different diets on fattening and slaughter performance and meat quality traits for"L(Large Yorkshire)×L(Landrace)"crossbred pigs.[Methods]Eighteen piglets of L×L crossbred with similar body weights about 51 kg were selected.The piglets were divided into 3 groups randomly and each group was assigned to 3 replicates with 2 piglets in a replicate.Group A was fed diet Ⅰ (control diet),group B was fed the same diet of group A in the first month of the trial but fed diet Ⅱ in second month,and group C consumed diet Ⅲ.All the pigs were fed in the same feeding condition for two months except the different diets during the trial.One pig in similar body weight from each replicate was slaughtered for the determination of slaughter performance and meat quality traits in the end of the trial.[Results]The average daily feed intake(ADFI)of pigs from group B was only(2.32±0.52)kg and significantly lower than those from group A and group C(P<0.05),but no difference was found in average daily gain(ADG) and feed/gain(P>0.05).Also,no differences occurred in the carcass length,back fat thickness,longissimus muscle (LM) area and dressing percentage(P>0.05).In addition,no differences were found in the meat quality traits of shear force,meat color,pH_(45 min),pH_(24 h) and cooking loss(P>0.05).However,the water-holding capacity of meat from group C was(2.58±0.02)ms and significantly lower than that of(2.80±0.20)ms from group A(P<0.05).Although the contents of glutamic acid and cystine in LM from group B was significantly lower than those from group A and group C(P<0.05),no differences occurred in the contents of other amino acids,the total amino acid and total flavor amino acid among the three groups(P>0.05).However,the inosine monophosphate content of LM from group C was only(331.80±11.53)mg/100 g and significantly lower than those of(361.00±6.36)and(366.37±4.80)mg/100 g from group A and B(P<0.05).Even though no differences were found in the contents of DM and CP in LM among the three groups of pigs,the content of intramuscular fat(IMF)in LM from group B and group C was increased by 45.6%and 46.58%respectively from that of group A(P<0.05),but no difference occurred between group B and C(P>0.05).[Conclusions]DietsⅡ and Ⅲ in this study caused no differences in fattening and slaughter performance of L×L crossbred pigs,but the effects on some meat traits were still significant,especially on the improvement of intramuscular fat in experimental pigs.Therefore,they could improve the meat quality of crossbred pigs to a certain extent.

文摘[Objectives]This study was conducted to analyze effects of antimicrobial peptides added to the diet of Tan sheep on their production, slaughter performance and blood composition. [Methods] Ninety two four-month-old Tan sheep were randomly divided into two treatment groups according to their body weight, 46 in each group. The control check group(CK) was feed with conventional diet, and the experimental group was fed with the addition of antimicrobial peptide on the basis of the conventional diet, with the added amount of 2.5 g/sheep per day. The experimental period was 60 d. [Results] The incidence rate was 75.06% lower in the experimental group than in the CK. The average daily weight gain per sheep was 11.27% higher in the experimental group than in the CK(P<0.05). The feed conversion ratio was 8.45% lower in the experimental group than in the CK(P<0.05). The average daily gross profit per sheep was 12.12% higher in the experimental group than in the CK. For slaughter performance, the data difference of each item was not significant. The PH at 45 min and 24 h after slaughter was within the normal range of fresh mutton. The cooked meat percentage and water loss rate showed no significant differences(P>0.05). The marbling ranged from 2.45 to 2.50, indicating that the fat content was moderate, and the difference between groups was not significant(P>0.05). The flesh color ranged from 3.00 to 3.15, between light red and bright red, belonging to the normal color of mutton, and the difference between groups was not significant(P>0.05). The shear force was between 2.50 and 2.65, without a significant difference between groups(P>0.05). The white blood cells, lymphocytes and platelets in the experimental group were lower than those in the CK(P<0.01). The erythrocytes and hemoglobin in the erythrocyte group were higher than those in the CK(P<0.05). The neutrophils and monocytes in the experimental group were lower than those in the CK(P<0.05). [Conclusions] This study provides a technical basis for the rational use of antimicrobial peptides and their application in ruminants.

文摘[Objectives]The study aims to discuss the effects of addition of arginine and glutamic acid or soybean phospholipid,vitamin E and yeast selenium in diet on the slaughter performance and meat quality of long(white)×large(York)binary hybrid pigs.[Methods]27 long×large castrated hybrid boars with the body weight of(54.4±0.15)kg were randomly divided into 3 groups,with 3 replicates per group and 3 pigs per replicate.Group A was the control group,in which the pigs were fed basal diet;in group B,0.8%arginine and 0.60%glutamate were added to the basal diet;in group C,75 g of soybean phospholipid,20 g of vitamin E and 8 g of yeast selenium were added to every 100 kg of the basal diet.The trial period was 60 d.After the experiment was ended,one test pig with similar body weight was selected from each replicate for slaughter and meat determination.[Results]The average weight gain and eye muscle area of the pigs in group B were significantly higher than those in group C(P<0.05),and also showed an increasing trend compared with group A,but there was no statistically significant difference(P>0.05);there was no significant difference between group B or C and group A in the average weight gain and eye muscle area(P>0.05).There was no significant difference in other slaughter performance between the three groups(P>0.05).Besides,there was also no significant difference in the content of various amino acids,total amino acids and total umami amino acids between the three groups(P>0.05).The inosine content in the longissimus dorsi muscle and muscle cooking loss of binary hybrid pigs in group C were significantly better than those in group B(P<0.05),and also had a tendency to be better than those in group A,but there was no significant difference(P>0.05);there was no significant difference between group B or C and group A in the inosine content and muscle cooking loss of the pigs(P>0.05).In addition,there was no significant difference in other meat traits and chemical composition of the longissimus dorsi muscle between group B or C and group A(P>0.05).[Conclusions]The addition of arginine and glutamic acid or soybean phospholipid,vitamin E and yeast selenium in diet had no significant effect on the growth rate,slaughter performance and meat traits of long×large binary hybrid pigs.

文摘In this paper, Duroc-lanndrae-Yorkshire crossbred piggy of born at 75 days of age, bouncing with health and similar body weight were randomly divided into experimental group (136 pigs) and control group (136 pigs). Pigs in control group were fed with conventional diets, and 4% microbial fermentation feeds were added to the basal diet of experimental group to research on the effect of performance and meat quality of pig breeding. The results indicated that after feeding 106 d, compared to control group, the slaughter performance, meat quality and content of fatty acid and amino acid of experimental group were all better, its slaughter rate increased 1.53%, the carcass weight increased 2.75% and the backfat thickness decreased 0.02 cm. In addition, the pork meat in test group hadn't antibiotic and heavy metal residues, while it had higher color score, lower pH45min and pH24h value, better tenderness and rate of cooked meat and higher content of fatty acids, polyunsaturated fatty acids and amino acids. Microbial fermentation feed using in test group can significantly improved the flavor and aroma of pork, and eating this pork conducive more to human health. Thus, the application of microbial fermenta- tion feed can provide a more safe, healthy and nutritious flavor pork for human beings.

文摘[Objective]This study aimed to evaluate the meat quality of frizzle Chick-en, and to find out the correlation between the meat quality and slaughter perfor-mance. [Method] The slaughter performance such as live chicken weight, carcass weight, semi-eviscerated weight, eviscerated weight, chest muscle weight, leg mus-cle weight, abdominal fat weight and the meat quality indices like color, pH and shear force of 12-week-old frizzle chickens were measured to analyze the correla-tion between slaughter performance and meat quality. [Result] The carcass percent-age, semi-eviscerated percentage, eviscerated percentage, chest muscle percentage, leg muscle percentage, abdominal fat percentage, intramuscular fat width and subcu-taneous fat thickness of the male chickens were 89.76%, 81.54%, 67.53%, 7.82%, 11.29%, 2.42%, 0.69 cm and 0.48 cm, of female chickens were 89.78%, 80.87%, 62.94%, 6.19%, 9.92%, 3.91%, 0.78 cm and 0.61 cm. Some of these traits exhibit-ed significant difference between the male and female chickens (P〈0.05). In male chickens, the chest muscle color, pH and shear force were 5.93, 6.15 and 3.72 kg, and the leg muscle color, pH and shear force were 6.18, 6.54 and 3.41 kg; in fe-male chickens, the chest muscle color, pH and shear force were 5.77, 6.05 and 3.41 kg, and the leg muscle color, pH and shear force were 6.03, 6.21 and 2.74 kg. The quality of chest and leg muscles of frizzle chickens significantly differed (P〈0.05). Carcass weight had significant positive correlations with semi-eviscerated weight and meat color (P〈0.05), and an extremely significant positive correlation with pH (P〈0.01). Semi-eviscerated weight and pH value shared a significant posi-tive correlation (P〈0.05). Eviscerated weight and leg muscle weight shared an ex-tremely significant negative correlation (P〈0.01). Abdominal fat weight correlated sig-nificantly and negatively with shear force (P〈0.05). Meat color and pH value had a significant positive correlation (P〈0.05). [Conclusion] This study provides theoretical basis for the breeding of excellent chicken varieties producing high-quality meat.

文摘[Objective] This study was conducted to understand goat germplasm char- acteristics. [Method] With some 24-month-old males and females Tibet goats as experimental materials, a slaughter experiment was carried out to determine their slaughter performance, muscle quality and muscle nutritional components. [Result] The body weights of males and females before slaughter were (20.16±1.26) and (19.33±4.86) kg, respectively; the dressing percentages of males and females were (43.86±1.74)% and (44.08±5.46)%, respectively; the meat percentages were (32.43± 1.52)% and (32.72±3.97)%, respectively; and the meat production rates of carcass were (73.28±0.09)% and (73.16±0.85)%, respectively. There were less differences in carcass measurements, carcass segmentation, muscle quality, muscle fiber charac- teristics, muscle nutritional components, muscle mineral contents and heavy metal contents between males and females, while eye muscle area and hind leg meat weight of males were significantly higher than those of females. In muscles of males and females, 18 amino acids were detected totally, EAA/TAA values were (39.23±0.24)% and (38.70±0.15)%, respectively, and EAA/NEAA values were (64.73± 0.65)% and (63.17±0.41)%, respectively. [Conclusion] This study lays a foundation for overall understanding of germplasm characteristics of Tibetan goats.
文摘This study aimed to study the germplasm characteristics of Tibetan goat distributed in Sichuan. Three male and three female goats of twelve-month-old Ti-betan goat were selected, and they were slaughtered for analysis of slaughter per-formance, muscle quality and muscle nutrients. The results showed that the pre-slaughter body weights, dressing percentages, meat percentages and carcass meat production rates of male and female Tibetan goats were (14.33±1.53) and (12.50±2.18) kg, (42.11±5.26)% and (43.85±4.51)%, (31.34±3.36)% and (32.84±3.16)%, and (72.34±0.54)% and (72.30±0.78)%, respectively. There were smal differences in car-cass size, carcass segmentation, muscle fiber properties, muscle quality, muscle nu-tritional composition, muscle minerals contents and muscle heavy metals contents between male and female Tibetan goats. A total of 18 kinds of amino acids were detected in the muscle of male and female Tibetan goats. The EAA/TAA ratios and EAA/NEAA ratios of male and female Tibetan goats were (39.18&#177;0.38)%and (38.70±0.72)%, and (64.31±1.03)% and (63.21±1.92)%, respectively.

[Method] Three male and three female goats of twelve-month-old Danba goat were selected to slaughter,and their slaughter performance, muscle qulity and mus- cle nutrients were determined. [Result] The pre-slaughter weights, dressing percent- ages, meat percentages and carcass meat production rates of the male and female Danba goats were (25.83±1.04) and (18.50±2.29) kg, (45.18±0.78)% and (38.89± 2.08)%, (33.76±1.4)% and (28.59±1.99)%, and (74.30±0.85)% and (74.08±0.65)%, respectively. The carcass length, carcass hind leg circumstance, carcass hind leg length, lumbar muscle thickness, hind leg meat yield, shoulder muscle yield and breast meat yield of male goats were significantly higher than those of female goats (P〈0.05), and no significant differenceswere found in other carcass size and carcass segmentation indices between male and female goats (P〉0.05). There were small differences in muscle fiber properties, muscle quality, muscle nutritional composition, muscle mineral content and muscle heavy metal content between male and female goats (P〈0.05). A total of 18 kinds of amino acids were detected in the male and female goats. The EAA/TAAs and EANNEAAs of male and female goats were (39.56±0.26)% and (39.48±0.66)%, and (65.45±0.71)% and (65.43±1.80)%, respec- tively. [Conclusion] This study will provide the basis for the understanding of the resource characteristics of Danba goat.

文摘[ Objective ] The paper was to study the effects of rapeseed straw on growth and slanghter performance of Sichuan white goose. [ Method ] Totally 400 3-day-old Sichuan white geese were randomly divided into four groups ; geese in control group were fed with the fundamental diet ; geese in group 1, group 2 and group 3 were fed with the fundamental diet containing 5%, 10% and 10% rapeseed straw instead of equal amount of wheat bran, respectively. The body weight and slaughter performance of Sichuan white geese in control group, group 1 and group 2 were determined at 10 weeks of age, while those in group 3 were determined at 14 weeks of age. [ Result] There was no significant difference in gross weight, slaughter weight, eviscerated weight with giblet, head weight, sole weight, wing weight, neck weight, muscular stomach weight and intestine indexes of 10-week-old white geese between group 1 and control group, and between group 2 and con- trol group ( P 〉 0.05 ) ; the live weight slightly decreased. The growth and slaughter performance of 14-week-old Sichuan white geese were significantly higher fllan that of 10-week-old geese (P 〈0.05), with better meat and flavor, but relatively low average daily gain (P 〈0.05 ) ; there was no significant impact on muscular stomach pH and intestinal pH (P 〉 0.05 ). [ Conclusion] Substituting partial wheat bran with rapeseed straw can satisfy the diet requirement of Sichuan white geese, but has no significant impact on its growth and slaughter performance ( P 〉 0.05).

文摘[ Objective] To study the meat production performance of geese in different crossbred combination, and provide a reference for cultivating new multiplication strains of meat geese. [Method] A total of five goose breeds including Taihu goose (T), Wulong goose (WL), Wanxi white goose (WX), Sichuan white goose (SC) and Sanhua goose (SH) were used as research objects, and eight crossbred combinations were designed. The body measurements, slaughter performance, conventional meat quality and muscle composition of 90-day-old geese in eight crossbred combinations were determined and comparatively analyzed. [ Result] All the body measurement indexes except thud width of WXSC combination were the biggest in the eight crossbred combinations. Contrarily, the body measurement indexes of SHSC combination, including average body weight, body slope length, breast depth, breast width, shank length, neck length and half-diving depth were the lowest in the eight crossbred combinations. The live weight, slaughter weight and abdomen fat weight of WXSC combinations ware 3 291.36, 2 956.46 and 77.84 g, respectively, which were the biggest in eight crossbred combinations. The slaughter rate of SHWL combinations was 92.96%, and more than other crossbred combinations. The shear force of SHT and WXWL combinations were the lowest (3.09 kg) and the highest (3.78 kg), respectively. The water holding capacities of SCWL and WXSC combinations were the highest (66.46%) and the lowest (61.48%), respectively. The percentage of moisture content of SHWL and SCT combinations were the highest (73.05%) and the lowest (66.77%), respectively. The crude protein content of SHT and SHWL combinations were the highest (23.32%) and the lowest (21.94%), respectively. The percentage of crude fat content of SHT and SCWL combinations were the highest (3.06%) and the lowest (1.67%), respectively. [ Concusion] The growth rate of WXSC combination is the fastest, and the meat performance of SHT combination is the best.

文摘[Objective]The aim was to evaluate heterosis of hybridization groups of New Zealand White rabbits and Fujian Yellow rabbits. [Method] Totaling 80 rabbits,including New Zealand White rabbits,Fujian Yellow rabbits,and direct-cross and reciprocal cross rabbits were measured in slaughter performance and meat quality. [Result] Live-weight,evisceration weight and semi-evisceration weight of rabbits in four groups were 1 817. 20 -2 308. 60,914. 10 -1 231. 50 and 985. 99 -1 315. 20 g,respectively. For slaughter performance,FY × NZ was the highest among male rabbits and NZ was the highest among female rabbits. In addition,shear forces of crureus and longissimusdorsi for rabbits in four groups were 25. 11 -40. 44 and 18. 02 -26. 44 N,respectively,among which male NZ was the lowest in shear force of crureus and female NZ was the lowest of longissimusdorsi. Water-loss rates of crureus and longissimusdorsi were 33. 43% -41. 52% and 31. 79% -39. 01%,among which male NZ proved the lowest in water-loss of crureus and male FY achieved the lowest level for the rate of longissimusdorsi. [Conclusion]Hybrid groups showed some heteroses in slaughter performance and meat quality.

文摘In order to study the meat development value of princess chicken,the body size traits and slaughter performance of 12-week-old F1 hybrid offspring of princess chicken(♂) and kirin chicken(♀) were measured and the correlations between different traits were analyzed. The results showed that body length,keel length and shank length of male F1 hybrid offspring were significantly higher than those of female chickens(P 【 0. 05). The live weight,carcass weight,semi-eviscerated weight,semi-eviscerated ratio,eviscerated weight,chest muscle weight,the leg muscle weight and heart weight of male chickens were extremely significantly higher than that of female chickens(P 【 0. 01),and the leg muscle ratio and wings weight were significantly higher than that of female chickens(P 【 0. 05),but sebum thickness of male chickens was extremely significantly lower than that of female chickens(P 【 0. 01). Other indicators failed to reach the significant difference level. There were extremely significant or significant correlations between the slaughter performance and body size in F1 hybrid offspring. The regression equations between different indicators were identified and developed. The results provided a certain theoretical reference to predict slaughter performance indicators through a living body size measurement,and revealed an improved production performance of F1 hybrid offspring.
文摘[Objective]The paper was to study effects of small peptide chelated trace elements(copper,iron,zinc and manganese)on growth performance,chicken quality and antioxidant capacity of rapid yellow feather broilers.[Method]Three hundred one-day-old yellow feather broilers with similar body weight were selected and randomly divided into three treatments:inorganic trace element group(basal diet+inorganic trace elements),organic trace element group(basal diet+small peptide chelated trace elements)and compound group(basal diet+50%inorganic trace elements+50%small peptide chelated trace elements).There were 10 replicates per treatment and 10 chickens per replicate.The trial lasted for 63 d.[Result]①Compared to inorganic trace element group,average daily gain(ADG)of yellow feather broilers in organic trace element group was significantly increased over the whole period(P<0.05).②There was no significant difference in slaughter performance and immune organ indices among the three test groups(P>0.05).③There was no significant difference in breast muscle pH,chicken color,drip loss,and shear force among the three groups(P>0.05),but cooking loss of chicken breast in inorganic trace element group was 27.46%and 22.53%higher than those in organic trace element group and compound group,respectively(P<0.05).④MDA content in serum in organic trace element group was 15.61%lower than that in inorganic trace element group(P<0.05).[Conclusion]Complete substitution of inorganic copper,iron,zinc and manganese by small peptide chelated copper,iron,zinc,and manganese significantly increases ADG of broilers,improves quality of chicken breast,and enhances antioxidant capacity.
文摘[Objective]The paper was to study the effects of amino acid or Fulibao nutritional additives on slaughter performance and pork quality of pigs,and to provide a theoretical basis for improving pork quality in pig breeding industry.[Method]Six Landrace×Yorkshire castrated male piglets were divided into three groups.The piglets in the first group were fed with conventional diet and used as the control.The piglets in the experimental group I were fed with the conventional diet supplementing 0.1%Fulibao,and those in the experimental group II were fed with the conventional diet supplementing 0.36%compound amino acid preparation.The piglets were reared for 2 months before being slaughtered.[Result]The average daily gains of piglets in the experimental groups I and II were 17.7%and 6.73%higher than that in the control group,but there was no difference in feed/gain ratio among the three groups.The dressing percentages of piglets in the experimental groups I and II were 2.7%and 1.72%higher than that in the control group,and the lean meat percentages were 3.5%and 7.97%higher than that in the control group,respectively.The meat fat ratios in the two experimental groups were significantly higher than that in the control group.The intermuscular fat in the experimental group II was significantly higher than that in the control group.However,the contents of intermuscular fat and inosinic acid in the experimental group II were significantly lower than those in the control group.[Conclusion]Both additives can improve the average daily gain and main slaughter performance of pigs,but can not improve the inosine acid content,and the compound amino acid preparation can not improve the intermuscular fat content.

文摘[Objective]The paper was to compare the slaughter performance and meat flavor of quality chicken under cage rearing and free-range farming conditions.[Method]A total of 4001-day-old cocks,S07 line cultivated by Sichuan Dahen Poultry Breeding Co.,Ltd.(bred for 4 succes-sive generations),were kept in cages until the end of 5 weeks of age,which were then divided into cage rearing and free-range farming groups.All cocks were fed with the same diet,and slaughter tests and meat quality analysis were carried out at the end of 10 and 22 weeks of age,respectively.[Result]The live weight,carcass weight and abdominal fat percentage in cage rearing group were significantly higher than those in free-range farming group(P<0.01),and the percentage of half-eviscerated yield and percentage of eviscerated yield in cage rearing group were significantly higher than those in free-range farming group(P<0.05),but there were no significant differences in dressing percentage,percentage of leg muscle and per-centage of breast muscle.The intramuscular fat(IMF)content and muscle fiber density of chicken in cage rearing group were significantly higher than those in free-range farming group(P<0.01),but there was no significant difference in inosinic acid(IMP)content.The content of IMF and IMF increased with the increase of feeding age,but the deposition rate of intramuscular fat was higher than that of IMF in late feeding period.[Conclusion]The study will provide reliable guidance for production and market consumption of high quality chicken.
