[Method] By using black soybean sprouts, yellow soybean sprouts and green soybean sprouts as raw materials, the content, DPPH ·clearance rate, OH · clearance rate and reduction capacity of natural peptides in various soybean sprouts at different germination time were determined, to evaluate the antioxidant capacity of natural peptides and compare it with that of Vc. [ Result] The results showed that the contents of natural peptides in black soybean sprouts, yellow soybean sprouts and green soybean sprouts varied at different germination time. To be specific, the content of natural peptides in black soybean sprouts reached the maximmn of 0. 194 mg/g at 2 d post-germination; the content of natural pepfides in yellow soybean sprouts reached the maximum of 0.231 mg/g at 2 d post-germination; the content of natural peptides in green soybean sprouts exhibited a negative correlation with the germination time, which reached the maximum of 0. 164 mg/g at 1 d post-germination. [ Conclusion] According to the determination of DPPH ·clearance rate, OH ·clearance rate and reduction capacity of natural peptides in three varieties of soybean sprouts, natural peptides in yellow soybean sprouts possess the highest antioxidant activity, followed by those in black soybean展开更多
The selenium-enriched soybean sprouts were prepared by adding selenium and rare earth La3+ into the cultivation solutions. The effect of rare earth La3+ on the accumulation of selenium in soybean sprouts was studied. ...The selenium-enriched soybean sprouts were prepared by adding selenium and rare earth La3+ into the cultivation solutions. The effect of rare earth La3+ on the accumulation of selenium in soybean sprouts was studied. When the concentration of La3+ was below 6 μg·ml-1, the contents of total selenium and organic selenium were both raised gradually, but decreased when the concentration of La3+ was above 7 μg·ml-1, the same trend occured also in the protein components extracted from selenium-enriched soybean sprouts. The highest selenium content 65.68 μg·g-1, organic selenium content 53.58 μg·g-1 and selenium content of protein 31.57 μg·g-1 were all observed at La3+ concentration of 6 μg·ml-1. It was indicated that La3+ could promote the uptake of selenium in the soybean sprouts at low concentrations. The contents of amino acids in protein were also increased when the concentrations of La3+ was 6 μg·ml-1, especially the contents of glutamic acid and aspartic acid were increased by 4% and 3% respectively.展开更多
