Using jujube juice prepared from red jujube as raw material and Saccharomyces cerevisiae as experimental strain,the effect of nutrients on the content of total ester in jujube wine was studied. The nutrients affecting the total ester content of jujube wine were glutamine,arginine,calcium chloride and biotin by Plackett-Burman design. Through the steepest ascent test,it was determined that the central points of the optimum addition of nutrients were glutamine 40 mg/L,arginine 50 mg/L,calcium chloride 35 mg/L and biotin 0. 25 mg/L,respectively.Through Box-Behnken experiment design,taking glutamine,arginine,calcium chloride and biotin as experimental factors,and the content of total ester in jujube wine as response value,the response surface optimization experiment was carried out and the verification experiment was also carried out. It was found that the response surface model can be used to predict the total ester content of jujube wine when nutritional elements were added. When the content of total ester in jujube wine was the highest,the optimal combination of nutrients was glutamine38. 8 mg/L,arginine 53. 8 mg/L,calcium chloride 35. 7 mg/L and biotin 0. 3 mg/L. At this point,the content of total ester in jujube wine was 628 mg/L,which was very close to the predicted value. Through the sensory evaluation of jujube wine,it was found that adding nutrients could help to improve the taste of jujube wine,and the fermentation method of jujube wine by adding nutrients was simple and feasible. 展开更多

Sugar beet pulp was as the only fiber source. The experiment was designed as a 6 x 6 Latin square with an adaptation period of 7 d followed by a 5-d total collection of feces and urine. Feed intake tended to decrease (P =0.] O) as total dietary fiber level increased. The apparent total tract digestibility of dry matter, crude protein and gross energy decreased (P 〈0.0]) when total dietary fiber increased but the digestibility of soluble dietary fiber and insoluble dietary fiber increased (P 〈0.01). We also conducted 24-h estimate energy requirements of the subjects. years with body mass index 22.0±1.4 kg/m2 were and basal energy expenditure (BEE) was determined activity, energy balance and factorial approach to Results TEE of subjects by DLW method was 9.45±0.57 M J/day (2258±180 kcal/day). The 24-h activity was 10.80±0.33 M J/day (2582±136 kcal/day). The energy requirement, derived from energy balance observations, was 9.93±1.32 M J/day (2373±315 kcal/day). The BEE of 6.65±0.28 M J/day (1589±67 kcal/day), calculated by the adjusted Schofield equation, was significantly higher (P〈O.O01) than that measured by indirect calorimetry, 5.99-±0.66 M J/day (1433-±158 kcal/day). The TEE derived from the factorial approach was 10.31-±0.43 M J/day (2463±104 kcal/day). Conclusion The TEE of Chinese young men measured by the DLW method was about 10% lower than the current recommended nutrient intake (RNI), suggesting that the RNI for Chinese men maybe overestimated. Further studies are warranted to determine the value of the estimated energy requirement. 展开更多

Abstract: The water quality of Dianshan Lake in Shanghai Municipality, China, is impacted by nutrient losses from agricultural lands around the lake. In this study, nine types of agricultural land use were monitored in 2010 and 2011, and a correlation analysis between nutrient losses from agricultural non-point sources (NPS) and nutrient stocks in the lake was conducted over monthly and seasonal time periods. The results indicate that the monthly average concentration of total nitrogen (TN) ranged from 1.41 to 7.34 mg/L in 2010 and from 1.52 to 5.90 mg/L in 2011, while the monthly average concentration of total phosphorous (TP) ranged from 0.11 to 0.26 mg/L in 2010 and from 0.13 to 0.30 mg/L in 2011. The annual loss of TN from agricultural NPS was 195.55 tons in 2010 and 208.40 tons in 2011. The cultivation of water oat made the largest contribution to the loss of TN. The annual loss of TP was 44.58 tons in 2010 and 48.12 tons in 2011, and multi-vegetable cultivation made the largest contribution to the loss of TP. The results of correlation analysis show that the monthly stocks of TN and TP in the lake have a positive correlation with the monthly losses of TN and TP from agricultural NPS. According to the seasonal data, the stocks of TN and TP in the lake both have a much stronger correlation with the losses of TN and TP from agricultural NPS in summer than in other seasons. Agricultural NPS pollution control should be the main focus for the water resource conservation in this area. 展开更多

Field experiments with medicinal rice Njavara were conducted at Cropping Systems Research Centre, Karamana, Thiruvananthapuram, Kerala during summer of 2007 and 2008. The experimental design was split plot with three replications. The treatments consisted of four establishment techniques viz., System of Rice Intensification SRI (M1), Integrated Crop Establishment Method (ICM) (M2), Package of practices (PoP) (M3) of Kerala Agricultural University and Conventional Management Practices (CMP) (M4) in main plot. Three nutrient sources viz., (1) organic, 2) integrated use of organic and inorganic, 3) chemical fertilizers only) were used under different establishment techniques. Root dry matter production was determined at weekly intervals and plant nutrients uptake was determined by calculating from the product of dry matter, straw dry weight, grain yield and percentage of nutrients. Results revealed that at early stages (4-6 WAT/WAS) (Weeks after transplanting/Weeks after sowing), root dry matter production hill-1 was in the order of SRI > ICM > CMP > PoP which changed to SRI > ICM > PoP > CMP from 7th week onwards. Maximum root dry matter (at 9th WAS/WAT) was recorded in SRI (0.51/0.50 g.hill-1 in 2007/2008). The total nutrients uptake (N, P, K, Fe, Mn and Zn) in conventional management practices was significantly higher than other establishment techniques. Among the nutrient sources, higher total (N, P, K, Fe, Mn and Zn) uptake by crop was recorded under integrated nutrient source than organic and inorganic sources. 展开更多

In this study,we investigated the effects of environmental factors on plant phenolic variability,seasonal dynamics of total phenolic content(TP),extractable condensed tannins(ECT),protein-bound condensed tannins(PBCT),fiber-bound condensed tannins(FBCT),total condensed tannins(TCT),protein precipitation capacity(PPC)and nutrient content in the branchlets and fine roots of Casuarina equisetifolia.TP and TCT concentrations in branchlets were lowest in the spring,then increased in summer and autumn,similar to the seasonal dynamics in air temperature.TP and TCT concentrations in fine roots were highest in summer,coinciding with heavy precipitation.In general,TP and TCT concentrations were higher in branchlets than in fine roots.No significant difference was found in C concentration among various seasons for either branchlets or fine roots.Branchlets had significantly higher N and P concentrations than fine roots in most seasons.The C/N and N/P ratios in branchlets were significantly lower than in fine roots in all seasons,except summer.The relationship between branchlets and fine roots was significant for C,P and FBCT,but no significant relationships were found for N,TP,ECT,PBCT and TCT.Additionally,TP and TCT content were each significantly correlated with PPC in branchlets and in fine roots.Both TP/N and TCT/N ratios were highest in the autumn for the branchlets and in the summer for fine roots.The results indicate that high temperatures lead to increased tannin production in branchlets,but that the tannin content in fine roots is mainly affected by precipitation.Tannin content was greater in branchlets than in fine roots,which may indicate that selective pressure is greater on branchlets than on fine roots. 展开更多

Plastic film mulching affects changes in nutrient contents in soil and absorption and utilization of nutrients in plants were by changing hydrothermal condition of soil.The temporal and spatial variation of the total soil salt and nutrient contents with mulch film removed at three different times during the early cotton growth stage and its effects on nutrient absorption and accumulation in cotton plants were studied over 2015-2017.The film removal treatments reduced salt accumulation in normal rainfall year(2017).Film removal increased contents of soil organic matter,the total phosphorus and available potassium at the end of growth stage,increased contents of soil hydrolyzable nitrogen and the total nitrogen in the surface soil layer(0-10 cm),and increased the total nitrogen contents in the deep soil layer(40-50 cm).Film removal increased accumulation of nitrogen and phosphorus nutrients in cotton plants in 2017 and accumulation of nitrogen,phosphorus and potassium nutrients in cotton plants in heavy rainfall year(2016).These experimental results indicated that removal of mulch film at an appropriate and targeted time in the bud stage of cotton promoted nutrient absorption. 展开更多

Analysis of Nutrition of Total Mixed Ration for Dairy Cows on a Large-scale Ranch of Heilongjiang Reclamation Area

With the rapid development of China's dairy industry,the yield and scale of dairy cows have gradually increased,and the total mixed ration(TMR)technology has been widely applied in pastures.The seven large-scale pastures in the Heilongjiang reclamation area were selected.The area was divided into high milk yield pastures(A,E,F and G)and low milk yield pastures(B,C and D).The nutritional contents of TMR of the seven pastures were compared with NRC(2001)recommendations.The results showed that in the high milk yield pastures,the crude protein(CP)contents were closer to NRC recommendations(2001)than those of the low milk yield pastures,and the contents of ether extract(EE)were significantly higher(P<0.05).The contents of acid detergent fiber(ADF)in TMR of all the scale pastures were close to those recommended by NRC(2001),where as the contents of neutral detergent fiber(NDF)were significantly higher than the NRC(2001)recommendations.After measuring the dry matter(DM)rumen degradation rates,CP,NDF and ADF of TMR of dairy cows on the ranch were assessed using the nylon bag method,CP contents of the high milk yield pastures were significantly higher(P<0.05)compared with those of the low milk yield pastures,and the rumen degradable protein(RDP)to rumen undegradable protein(RUP)ratio was more ideal.The diets in the high milk yield pastures had significantly higher NDF contents and degradation rates than those in the low milk yield pastures,except pasture D(P<0.05).The diets in pastures E and G(with higher milk yields)had higher ADF degradation rates than pastures B,C and D,which had lower milk yields(P<0.05).Additionally,the type and digestibility of roughage were also related to dairy cows'performance.In summary,dairy cow performance was positively correlated with the nutrition of TMR.By exploring the quality of TMR from the aspects of TMR's nutritional contents,rumen degradation rates and feed ingredients,this study provided a reference for the evaluation of TMR nutrition. 展开更多

Laboratory Design Criteria for Monitoring Biostimulated Bioremediation of a Crude Oil Contaminated Soil in Niger Delta Using Total Petroleum Hydrocarbon

The remediation of crude oil-impacted soil has always been a challenge in different soil environments and climatic conditions. Bioremediation technology has offered a breakthrough in restoring crude oil-impacted soil/sediment in muddy, dry soil and wetlands. Though, there have been varied environmental conditions that have hampered the success of the bioremediation process. This study has evaluated the effectiveness of a biostimulated bioremediation of crude oil-impacted soil using some design criteria—nutrient amendment (NPK fertilizer) and moisture content. Soil sample sets—A, B, C, D, E, F, and G were impacted with crude oil at a ratio of 10 g/kg and amended with varying amounts of nutrient 30, 60, and 80 g of N.P.K fertilizer. The medium for the inoculation of the nutrient was water and the volume of water applied varied from 30% to 80% saturation. The soil sample sets were harvested at an interval of 3 months for 180 days to determine the concentration of total petroleum hydrocarbon left in the soil. The analysis of the total petroleum hydrocarbon was achieved using a GC-FID with a capillary column and autosampler. Soil samples were extracted with mixed solvent dichloromethane and acetone at a 1:1 ratio. The total petroleum hydrocarbon results show that biostimulated bioremediation achieved better results in soil sample sets with low moisture content (30% water saturation) and moderate nutrient amendment. The biodegradation of the sample sets with high water saturation and a high nutrient amendment was slow with a higher amount of total hydrocarbon content at the end of the 180 days. The variability in the hydrocarbon degradation pattern of contaminated soil shows that biostimulated bioremediation achieved better results in soils with low moisture content than in soil environments with high water content (saturation). More so, nutrient overdosing of the substrate hampered the effectiveness of the remediation process. 展开更多

It is hypothesized that betaine supplementation improves production performance in mid-lactation dairy cows.Twenty-one mid-lactation dairy cows were assigned to a 3×3 Latin square design with three periods of 28 d each and fed three treatments of betaine(0,100,and 200 g/d).Milk samples were collected on day 21 and day 28 of each period.During days 21 to 28,cows were fed with chromic oxide(15 g/d per cow).On days 26 to 28,fecal samples were collected to determine apparent total tract nutrient digestion.Blood samples were obtained on days 26 to 28 of each period for fatty acid(FA)analysis.Data were analyzed using the Proc Mixed in SAS.Apparent total tract dry matter(DM)digestibility tended to be greater for cows supplemented with 100 g betaine as compared to no dietary betaine(61 vs.58±1%;p=0.1).In contrast,DM intake(DMI),milk fat percent,milk yield,energy-corrected milk(ECM)yield,and milk FA composition did not differ among treatments.Supplementation of betaine can decrease the serum saturated FA C11,C12,C15 and C17,total monounsaturated FA,and C18:2 all trans-9,12.In addition,total serum n-3 polyunsaturated FA was significantly increased.This result can decrease total serum n-6 to n-3 ratio(6.80,7.07,and 6.50±0.16%,for 0,100,and 200 g betaine,respectively;p=0.04).Overall,even betaine supplementation did not change DMI or production,betaine could affect the DM digestibility and serum FA biosynthesis. 展开更多

为探究秸秆还田配施氮肥对玉米氮肥利用率及产量的影响,以黑龙江省农业科学院齐齐哈尔分院肥料长期定位试验田为研究对象,研究CK(常规种植)、秸秆还田不配施氮肥(SR+N0)、秸秆还田分别配施氮肥262.5 kg·hm^(-2)(SR+N1)、300.0 kg&#... 为探究秸秆还田配施氮肥对玉米氮肥利用率及产量的影响,以黑龙江省农业科学院齐齐哈尔分院肥料长期定位试验田为研究对象,研究CK(常规种植)、秸秆还田不配施氮肥(SR+N0)、秸秆还田分别配施氮肥262.5 kg·hm^(-2)(SR+N1)、300.0 kg·hm^(-2)(SR+N2)、337.5 kg·hm^(-2)(SR+N3)、375.0 kg·hm^(-2)(SR+N4)、412.5 kg·hm^(-2)(SR+N5)、450.0 kg·hm^(-2)(SR+N6)和487.5 kg·hm^(-2)(SR+N7)等处理对土壤全量养分、化学计量特征、氮肥农学效率、氮肥偏生产力、氮肥利用率及玉米产量的影响进行分析。结果表明,与CK相比,SR+N5(秸秆还田+增施10%氮肥)和SR+N6(秸秆还田+增施20%氮肥)处理对土壤全氮、全磷的累积最佳,SR+N4(秸秆还田+常规施肥)处理全钾含量最高,SR+N5处理的土壤有机碳含量提高了3.24%。SR+N6和SR+N7(秸秆还田+增施30%氮肥)处理的土壤C/N较CK降低了20%以上,SR+N4处理C/P值最高;SR+N5处理的C/K、N/K和P/K值均有所提升。SR+N2(秸秆还田+减施20%氮肥)处理氮肥农学效率、氮肥偏生产力、氮肥利用率提升最为明显,与对照CK相比,氮肥农学效率、氮肥偏生产力、氮肥利用率分别提高了21.14%、22.72%和0.04%。秸秆还田下,当地推荐施氮量加20%(450.0 kg·hm^(-2))产量最高。秸秆还田的基础上配施氮肥对玉米产量的影响呈二次函数关系,在秸秆还田配施氮肥用量为450.0 kg·hm^(-2)时,继续加大氮肥配施量会抑制玉米的产量。综合考虑,增氮20%(450.0 kg·hm^(-2))可作为协调半干旱区秸秆还田下春玉米产量的合理选择。 展开更多

为早产儿尤其是极/超早产儿提供充足和均衡的营养是促进其正常生长发育和改善远期预后的物质基础,肠内营养是最佳的营养方式。既往系统回顾性分析显示使用基于循证医学的标准化喂养管理策略可有效促进全肠内喂养的建立,缩短肠外营养时间... 为早产儿尤其是极/超早产儿提供充足和均衡的营养是促进其正常生长发育和改善远期预后的物质基础,肠内营养是最佳的营养方式。既往系统回顾性分析显示使用基于循证医学的标准化喂养管理策略可有效促进全肠内喂养的建立,缩短肠外营养时间,改善早产儿的营养结局,而不增加坏死性小肠结肠炎或死亡的发生风险。基于国内外相关研究,该共识制订组采用证据推荐分级的评估、制订与评价方法(Grading of Recommendations Assessment,Development and Evaluation),从早产儿肠内营养的目标、过渡期的肠内营养、稳定生长期的肠内营养、肠内特殊营养素的补充及肠内营养的监测等5个方面提出20条推荐意见,旨在为相关从业人员提供早产儿肠内营养管理的建议,以改善早产儿的临床结局。 展开更多

苜蓿与老芒麦混播对牧草产量及土壤养分的影响 被引量:2

为获得持续高产及土壤肥力显著改善的豆禾混播人工草地,选择建植第三年的青牧1号老芒麦(Elymus sibiricus cv.Qingmu No.1)和清水紫花苜蓿(Medicago sativa cv.Qingshui)混播草地,对不同豆禾混播比例(2∶4、2∶5、2∶6、2∶7和2∶8)及... 为获得持续高产及土壤肥力显著改善的豆禾混播人工草地,选择建植第三年的青牧1号老芒麦(Elymus sibiricus cv.Qingmu No.1)和清水紫花苜蓿(Medicago sativa cv.Qingshui)混播草地,对不同豆禾混播比例(2∶4、2∶5、2∶6、2∶7和2∶8)及播种方式(同行和间行)下牧草干草产量及土壤肥力特性进行综合评价,以获得最优种植模式。结果表明:混播方式与比例对牧草产量有极显著影响,其中,豆禾比2∶4同行混播干草产量最高,较老芒麦单播提高了7倍;各处理的土壤有机质含量无显著差异,但当豆禾比为2∶5时,同行混播的土壤全氮和间行混播的碱解氮含量显著高于其他混播处理,且分别较老芒麦单播显著增加80.00%和21.99%,其间行混播较苜蓿单播碱解氮含量显著增加17.47%;随着混播比例中老芒麦占比增高,土壤有效磷含量变化显著,其中豆禾比2∶8间行混播有效磷含量较老芒麦和苜蓿单播分别提高了1.4倍和2.4倍,豆禾比2∶7间行混播有效磷含量较苜蓿单播提高了1.7倍;豆禾比2∶6同行和间行混播全钾含量较苜蓿单播分别增加12.55%、9.04%,其速效钾含量显著高于单播,较苜蓿单播分别提高9.95%、8.95%,较老芒麦单播分别提高13.32%、11.26%;灰色关联度综合分析表明,混播处理均优于单播处理,其中豆禾比2∶5和2∶6同行混播模式相对较优。 展开更多

东方山羊豆营养成分测定及提取物抗氧化活性评价

【目的】测定东方山羊豆营养成分及提取物抗氧化活性,探索不同提取溶剂对东方山羊豆提取物抗氧化活性的影响,为东方山羊豆相关功能性产品的开发提供理论参考。【方法】参考国家标准测定东方山羊豆中常规营养成分含量;以水和浓度为30%、... 【目的】测定东方山羊豆营养成分及提取物抗氧化活性,探索不同提取溶剂对东方山羊豆提取物抗氧化活性的影响,为东方山羊豆相关功能性产品的开发提供理论参考。【方法】参考国家标准测定东方山羊豆中常规营养成分含量;以水和浓度为30%、50%、70%、90%的乙醇溶液分别提取东方山羊豆,对应获得提取物A~E;采用三氯化铝比色法、福林酚法、苯酚-硫酸法分别测定东方山羊豆提取物中总黄酮、总多酚和总多糖含量;以DPPH、ABTS自由基清除率和总抗氧化能力为指标评价东方山羊豆体外抗氧化活性,并对东方山羊豆提取物总黄酮含量、总多酚含量、总多糖含量、DPPH自由基半抑制浓度(IC 50)、ABTS自由基IC 50和铁离子还原抗氧化能力(FRAP)值之间进行相关性分析。【结果】东方山羊豆中粗蛋白质、粗脂肪、粗纤维、灰分含量分别为19.74%、2.53%、37.10%和8.79%。提取物B和C中总黄酮含量分别为97.56和100.78 mg/g,提取物C中总多酚和总多糖含量分别为89.91和38.69 mg/g,均显著高于其他提取物(P<0.05);提取物C和D中DPPH自由基IC 50分别为0.13和0.11 mg/mL,ABTS自由基IC_(50)分别为0.73和0.74 mg/mL,均显著低于其他提取物(P<0.05);提取物C和D中FRAP值分别为1497.87和1431.85 mmol/g,均显著高于其他提取物(P<0.05)。相关性分析显示,东方山羊豆提取物中总黄酮、总多酚含量与DPPH、ABTS自由基IC 50呈极显著负相关(P<0.01),与总抗氧化能力呈极显著正相关(P<0.01)。【结论】东方山羊豆粗蛋白质、粗脂肪以及矿物质元素等营养成分丰富,具有较高的饲用价值。东方山羊豆提取物中总黄酮和总多酚的含量与抗氧化活性具有强相关性,其中50%乙醇提取物中总黄酮和总多酚含量最高,抗氧化活性最强。 展开更多

试验为比较分析不同蛋白饲料原料的营养价值,采集10种来自不同肉牛养殖场的蛋白质饲料(豆粕、棕榈粕、棉籽粕、味精渣、芝麻饼粕、葵花粕、玉米酒精糟、牡丹籽粕、啤酒糟和豆渣),每种饲料3个重复,测定分析碳水化合物组分、蛋白质组分、... 试验为比较分析不同蛋白饲料原料的营养价值,采集10种来自不同肉牛养殖场的蛋白质饲料(豆粕、棕榈粕、棉籽粕、味精渣、芝麻饼粕、葵花粕、玉米酒精糟、牡丹籽粕、啤酒糟和豆渣),每种饲料3个重复,测定分析碳水化合物组分、蛋白质组分、氨基酸组成和预测能值指标。结果显示,豆渣的总碳水化合物(CHO)含量最高,为73.78%,其次为牡丹籽粕(66.76%)和棕榈粕(65.89%)。味精渣和豆粕的非结构性碳水化合物(NSC)含量较高,而不可降解碳水化合物(CC)含量较低。味精渣、豆粕、芝麻饼粕和棉籽粕的粗蛋白(CP)含量较高,均在50%以上且显著高于其他原料(P<0.05)。味精渣和牡丹籽粕的非蛋白氮(PA)含量和快速降解真蛋白质(PB_(1))含量显著高于其他原料(P<0.05)。豆粕、味精渣和棉籽粕的氨基酸组成相近,必需氨基酸(EAA)含量和赖氨酸(Lys)含量高于其他原料(P<0.05)。玉米酒精糟、味精渣、牡丹籽粕和芝麻饼粕的总可消化养分(TDN)含量较高且均大于80%,增重净能(NE_(g))和泌乳净能(NE_(L))与TDN有相同的变化趋势。研究表明,不同蛋白质饲料的营养成分含量存在较大差异,综合考虑蛋白质组分和预测能值指标,味精渣、棉籽粕和芝麻饼粕的营养价值与豆粕相当,可作为替代豆粕的饲料原料。 展开更多

为探究全营养乳液在贮藏过程中的品质变化规律,将其置于不同温度(20、30、40℃)下贮藏,对粒径、电位、离心沉淀率、色差、p H、维生素C、维生素E和感官评分变化情况进行回归性分析并研究了稳定动力学。结果表明,贮藏温度是影响全营养乳... 为探究全营养乳液在贮藏过程中的品质变化规律,将其置于不同温度(20、30、40℃)下贮藏,对粒径、电位、离心沉淀率、色差、p H、维生素C、维生素E和感官评分变化情况进行回归性分析并研究了稳定动力学。结果表明,贮藏温度是影响全营养乳液品质变化的重要指标。随着贮藏时间的延长,平均粒径增加了77.19%~156.74%,电位绝对值减小了27.36%~48.31%。a^(*)、b^(*)值增加,亮度减弱。维生素C对温度的敏感性高且降解符合一级反应,半衰期从144 d降低至81 d,反应活化能E_(a)为21.75 k J/mol。p H、粒径和离心沉淀率遵循零级反应动力学,色差、电位、维生素C含量的变化遵循一级反应动力学。热力学参数ΔH>0,ΔS<0,属于非自发进行的吸热反应。ΔG依赖于温度变化,随温度的增加呈上升趋势。该研究为全营养乳液的贮藏保质提供了理论参考依据。 展开更多

为了扩展不同类型蛋白质配料在液态全营养特医食品乳剂中的应用,探究动植物蛋白在特医乳液制备及消化特性方面的差异,该研究分别选取了酪蛋白(CS)、乳清蛋白(WPI)、大豆蛋白(SPI)、豌豆蛋白(PPI)和绿豆蛋白(MPI)作为界面稳定剂制备乳液... 为了扩展不同类型蛋白质配料在液态全营养特医食品乳剂中的应用,探究动植物蛋白在特医乳液制备及消化特性方面的差异,该研究分别选取了酪蛋白(CS)、乳清蛋白(WPI)、大豆蛋白(SPI)、豌豆蛋白(PPI)和绿豆蛋白(MPI)作为界面稳定剂制备乳液,系统探究灭菌工艺和营养成分添加对乳液性质的影响,并筛选其中热稳定的模板乳液(未添加维生素和矿物质)和特医乳液(添加维生素和矿物质)进行体外胃肠消化特性研究。CS、WPI、SPI和PPI制备的特医乳液状态良好,MPI特医乳液出现部分絮凝。灭菌后,WPI、MPI特医乳液分别发生凝胶和絮凝现象;CS、SPI和PPI特医乳液外观均匀,且制备的乳液具有较良好的稳定性,能在30 d内保持粒径和电位稳定。进一步选取CS、SPI和PPI制备的模板乳液和特医乳液进行体外消化性质分析,消化产物测试显示CS与SPI、PPI特医乳液的胃肠消化情况无明显差异,SPI和PPI的游离氨基释放量分别为21.095 mmol/L和19.524 mmol/L。该研究有助于理解不同类型蛋白配料在液态全营养特医乳剂中的应用表现,为液态高蛋白特医食品开发提供一定的技术支持。 展开更多
