This paper summarized the present situation and future development of the fresh maintaining and processing technology in fruit and vegetable industry ; the main techniques and their application in this field. It also provided a new approach to accelerate the development of our fruit and vegetable industry. The major contradictions to restrict its development were analyzed ,and developing objective and critical yields of Chinese processing industry of fruit and vegetable were pointed out in this paper.展开更多
