利用鲢鱼骨头制备鱼骨粉的研究 被引量:2

以鲢鱼加工废弃鱼骨为原料,以酶解率和鱼骨粉得率为质量指标,研究酶解和高压处理工艺对鱼骨粉品质的影响。首先通过对比木瓜蛋白酶、碱性蛋白酶、中性蛋白酶三种酶类对鱼骨原料的酶解效果,筛选出最优酶并对其添加量、pH、酶解温度、酶... 以鲢鱼加工废弃鱼骨为原料,以酶解率和鱼骨粉得率为质量指标,研究酶解和高压处理工艺对鱼骨粉品质的影响。首先通过对比木瓜蛋白酶、碱性蛋白酶、中性蛋白酶三种酶类对鱼骨原料的酶解效果,筛选出最优酶并对其添加量、pH、酶解温度、酶解时间、料液比5个酶解条件,进行5因素10水平均匀试验U10(105)优化,再对鱼骨高压处理时间进行5水平单因素试验对比,最后对鱼骨粉制品进行水分含量、总钙含量、灰分含量及200目筛余物进行检测。结果表明,酶解鲢鱼骨头较好的酶为中性蛋白酶,最优酶解条件为:加酶量2300μ/g,pH 7.2,酶解温度47℃,酶解时间7h,料液比1∶11,在0.1MPa,121℃条件下,最佳高压处理时间为30min。最终得到鱼骨粉制品酶解率达20.13%,鱼骨得率达19.8%;水分含量为9.38%,总钙含量为30.06%,灰分含量为58.07%,200目筛余物为0。 展开更多

目的:对茯苓产地初加工的4种方法进行比较分析,探求茯苓最佳加工工艺。方法:采收的鲜茯苓用鲜切、蒸制、发汗、发汗蒸制4种方式加工,评定茯苓的外观性状,测定茯苓及茯苓皮的成品率、水分、浸出物、多糖及总三萜含量。结果:蒸制组和发汗... 目的:对茯苓产地初加工的4种方法进行比较分析,探求茯苓最佳加工工艺。方法:采收的鲜茯苓用鲜切、蒸制、发汗、发汗蒸制4种方式加工,评定茯苓的外观性状,测定茯苓及茯苓皮的成品率、水分、浸出物、多糖及总三萜含量。结果:蒸制组和发汗蒸制组的感官评价结果明显优于鲜切组和发汗组;蒸制组的成品率最高;各组水分及碱溶性多糖的含量均无显著性差异;蒸制组和发汗蒸制组浸出物、水溶性多糖、总三萜含量显著高于其他两组。结论:蒸制和发汗蒸制在外观性状、成品率及各指标成分含量方面均显著优于鲜切和发汗,但考虑到生产周期、人工成本等,建议在茯苓初加工过程中采用蒸制加工的方法。 展开更多

家福捕鸟蛛(Selenocosmia jiafu)是一种生活在广西、云南等地的蜘蛛新种。为了阐明其毒素的分子多样性和筛选河豚毒素不敏感型(Tetrodotoxin-resistant,TTX-R)钠通道抑制剂,利用SMART法构建了毒腺全长cDNA文库,并进行DNA测序和表达序列... 家福捕鸟蛛(Selenocosmia jiafu)是一种生活在广西、云南等地的蜘蛛新种。为了阐明其毒素的分子多样性和筛选河豚毒素不敏感型(Tetrodotoxin-resistant,TTX-R)钠通道抑制剂,利用SMART法构建了毒腺全长cDNA文库,并进行DNA测序和表达序列标签(Expressed sequence tags,ESTs)聚类分析。结果表明家福捕鸟蛛毒腺双链cDNA条带分布在300~3 000 bp。经测序得到752个高质量的EST序列,去冗余后得到257个唯一序列,其中毒素序列438条。家福捕鸟蛛毒素-16(Jiafu toxin-16,JF-16)是从家福捕鸟蛛粗毒中分离得到的1种分子量为3 954.616的哺乳类神经毒素,其全序列为H_2N-ECTKLLGGCTKSSECCPHLGCRRKWPYHCGWDGTF-COOH。研究结果揭示JF-16的全长cDNA为518 bp,编码87个氨基酸。全细胞膜片钳试验结果表明JF-16对大鼠背根神经节(Rat dorsal root ganglion,DRG)细胞TTX-R钠通道具有抑制作用。说明JF-16是一种潜在的具有镇痛活性的蜘蛛毒素。本研究有利于开展家福捕鸟蛛毒腺转录组研究和JF-16潜在镇痛活性分析。 展开更多

In order to study the effects of Ampelopsis grossedentata on endogenous cholesterol biosynthesis and the effects of reducing blood lipid in hyperlipidemia rats,extraction of flavonoids from Ampelopsis grossedentata by using ethanol(TFAG),and the effects of TFAG on intracellular cholesterol synthesis were detected by amphotericin B-cell model;SD hyperlipidemia rat model was established by feeding high fat diet.A formulated medicine called Xuezhikang was used as a positive control,and TFAG of different doses were administered to the stomach for 30 d continuously to measure the indexes of heart,liver tissue homogenate and serum;part of the liver was taken for pathological observation.The results showed that TFAG could significantly inhibit the synthesis of cholesterol in cells.TFAG of different doses could significantly reduce the content of TC and TG in serum of hyperlipidemia rats,and increase the content of HDL;TC and TG in heart and liver were also decreased;besides,it could increase the content of SOD,CAT and GSH in the liver of hyperlipidemia rats,and reduce the content of MDA.The results of pathological section showed that TFAG could improve the damage degree of hepatocytes in hyperlipidemia rats,and the effect of high dose group was similar to that of Xuezhikang group.In general,TFAG has good antioxidant and reducing blood lipid effects,and can effectively inhibit liver steatosis. 展开更多

Optimization of Blueberry Wine Fermentation Process

Blueberry was used as material for the optimization of fermentation process of fruit wine through single factor and orthogonal experiments with the contents of alcohol,total sugar,total acid and anthocyanin as indicators.The best recipe was concluded as follows:in combination with 19°Bx initial sugar level,0.35%yeast innoculation and 55 mg/L sodium metabisulfte,main fermentation was performed at room temperature for 8 d in summer,the alcohol content of the obtained blueberry fruit wine was 13%(volume fraction),the total sugar content was 2.54%,the total acid was 0.15 mol/L,the final anthocyanin content was 145.62 mg/L after its gradual decrease with the extension of brewing time;post-fermentation was carried out at 20℃for 20 d.Finally,sensory evaluation showed that the blueberry wine is clear and transparent in bright purple-red color,and enjoyable for its rich aroma,full mouthfeel,moderate sweet and sour taste. 展开更多
