Among six major types of tea(white,green,oolong,yellow,black,and dark teas)from Camellia sinensis,oolong tea,a semi-fermented tea,with its own unique aroma and taste,has become a popular consumption as indicated by the increasing production.Representing the characteristic flavonoids of oolong tea,theasinensins are dimeric flavan-3-ols.Many recent studies have indicated that oolong tea and theasinensins possess several health benefit properties.We consider it significant and necessary to have a comprehensive review in the recent advances of oolong tea.Therefore,the aim of the present review is to provide a new perspective on oolong tea and its characteristic phytochemicals,theasinensins associated with health benefits,molecular action pathway,and chemical mechanism of theasinensin formation from scientific evidences available on the literature.Furthermore,the chemical characterization of the oxidation products and the model oxidation system to the chemical changes of theasinensins are also discussed. 展开更多

Rice bran oil is a healthy oil from many aspects.The oil has a balanced fatty acid profile comparing with many other vegetable oils.The key difference is the minor components or micronutrients or unsaponifiable matter... Rice bran oil is a healthy oil from many aspects.The oil has a balanced fatty acid profile comparing with many other vegetable oils.The key difference is the minor components or micronutrients or unsaponifiable matters contained in the oil that are very special and in larger percentages.The oil contains more than 1.5%oryzanol that gives nutritional and pharmaceutical functions from the studies so far.More studies are needed to demonstrate the wide functions in many aspects.The oil also contains large percentage of phytosterols which received huge amount of studies for nutritional applications.Furthermore,the oil contains tocopherols and tocotrienols,in which for the later particularly it gives many special functions including prevention of breast cancers for example.When the oil is properly processed and used in foods,those functions are more and more demonstrated in nutritional or biological studies.Thus the oil in food and pharmaceutical applications is in exploring both in academic studies and industrial practice.In this work,an overview of such progress is given. 展开更多

The use of silk sericin protein as a biomaterial to co-encapsulate probiotic Lactobacillus casei TISTR 1463 with alginate and various prebiotics was determined.In addition,0.2%silk sericin was also evaluated as a coating material to improve the viability of probiotic cells.Silk sericin coating has the potential to enhance probiotic survival in freeze-dried microcapsules.Under refrigerated storage condition of 4℃for 120 days,alginate-silk sericin-maltitol with silk sericin coating(ASM-C)provided the best performance with the lowest inactivation rate(k)and the highestδparameter(the first decimal reduction time)applied by the log-linear and Weibull models,respectively.However,the stability was relatively low at the temperature of 30℃.Co-encapsulation of alginate-silk sericin-prebiotic and coated with silk sericin exerted a protective impact on the strain survival when exposed to high temperatures and transited through the digestive system. 展开更多
