Consideration of Healthy Eating Obsession (Orthorexia Nervosa) for Students Educated in Nutrition and Dietetics Department

Objective:It was conducted to evaluate the susceptibility to ON(orthorexia nervosa)in the students of the nutrition and dietetics department according to the variables of gender,age and BMI(body massındex).Subjects and Methods:The research covers the students of Marmara University Faculty of Health Sciences,Department of Nutrition and Dietetics in September-October 2017-2018 academic year.The data were collected by survey method.Socio-demographic characteristics and anthropometric measurements of the participants were questioned.EAT-40(Eating Attitude Test),ORTO-15 test and MOCI(Maudsley Obsessive Compulsive Inventory)were used in the study.It was evaluated with SPSS(The Statistical Package for The Social Sciences)21.0 program.Results:205 people participated in the study.EAT-40 scores were found to be≤20 in 94%of the women and 95.2%of the men in the study.The EAT-40 score is≥21 in 6%of women and 4.8%of men in the study(p=0.646>0.05).The ORTO-15 score of 72.3%of women and 71.4%of men is≤40(p=0.934>0.05).EAT-40 average is 10.25±1.10 in underweight.It was found to be 9.21±0.42 in normals and 8.23±0.76 in slightly obese subjects(p=0.758>0.05).ORTO-15 average of those with BMI≤18.49 kg/m2 is 39.59±0.54;Those with 18.50-24.99 kg/m2 were found to be 38.30±0.25 and those with 25.00-29.99 kg/m2 were found to be 39.54±0.75(p=0.098>0.05).As the EAT-40 score increased,the ORTO-15 score decreased.It shows a negative,statistically significant difference between EAT-40 and ORTO-15 scores(p=0.00<0.05).Conclusion:It was concluded that orthorexic tendency is common(72.2%)in nutrition dietetic students,and ON is associated with BMI and EAT-40 scores.In terms of ON,it would be beneficial to conduct comprehensive international studies and determine DSM(Diagnostic and Statistical Manual of Mental Disorders)diagnostic criteria. 展开更多

Are Nutrition and Dietetics Students More Prone to Eating Disorders Related Attitudes and Comorbid Depression and Anxiety than Non-Dietetics Students?

It was aimed to investigate the eating attitudes and its relationships with anxiety and depression at Nutrition and Dietetics students. Students of Nutrition and Dietetics Departments were included in study group (n: 135) and non-medical students (n: 69) were in control group. Eating attitudes test (EAT-40), Beck Depression Inventory (BDI), and Beck Anxiety Inventory (BAI) were applied to all students and some anthropometric measurements were taken. Body mass index (BMI) and percent of body fat were higher at students in study group than students in control group. There were no significant differences between groups with respect to EAT, BDI and BAI scores. But, BMI and body fat percentage in girls were significantly lower than boys. Both EAT and BDI scores were significantly higher in girls than boys but BAI scores did not differ significantly. It was concluded that students training on Nutrition and Dietetics might have obsessions related to body image. But results of this study revealed that especially young women were more susceptible to eating disorders and depression. 展开更多

Betalains are natural coloring pigments with betalamic acid as the core structure of all subclasses.Besides their coloring properties,betalains exhibit various biological activities,including antioxidant and anti-inflammatory properties,which are highly imperative.Further in-vivo studies reported that betalains protect various body organs,leading to health enhancement.Body organs,including the heart,liver,kidney,lung,etc.,are important for a healthy life.However,these organs can be affected or damaged by various stress factors,toxicants,and harmful substances.Recent studies have claimed that betalains could protect all vital organs of the body through antioxidant and anti-inflammatory mechanisms.This review article described the in-vivo antioxidant and anti-inflammatory activities of betalains in various cell-line or animal models.A comprehensive discussion has been provided on the mechanism of action of betalains in protecting various body organs,including cardio-protective effect,hepato-protective ability,renal protection capacity,repro-protective ability,neuro-protective effect,lung protection,and gut protection ability.Finally,future research directions and conclusions have been outlined. 展开更多

Investigation of the Acceptability of Cultured Meat in University Students

Background: Over the past 20 years, cultured meat has drawn a lot of public attention as a potential solution to issues with animal husbandry, including inadequate use of natural sources, improper animal welfare practices, and possible risks to public health and safety. The novel method of producing meat through culture reduces the need for animals to produce muscle fiber, thereby obviating the necessity for animal slaughter. Apart from its ethical advantages, cultured meat presents a possible way to fulfill the expanding need for food among growing populations. The purpose of this research was to find out whether Turkish students would be willing to pay for and accept cultured meat. Technique: Method: 371 university students who willingly consented to fill out a questionnaire and provide demographic data make up the research sample. Questions from previous studies on the acceptability of cultured meat were compiled to create the survey. The research’s data collection took place in March and April of 2022. The research was completed in June 2022 after the data had been processed and analyzed. Results: The results showed that the majority of participants were female and had omnivorous eating habits. Based on the results of the Bonferroni correction test, students with a higher intention to purchase and consume cultured meat were those who received economics and business education. Students with two years of university education had a higher overall survey score than those with four years of education (p < 0.05). Furthermore, it is discovered that there is a negative correlation between the participants’ ages and their Factor 2 (using cultured meat as an alternative to industrial meat) and Factor 3 (consuming and purchasing it) section points (r = -109, p = 0.036) (r = -0.121, p = 0.019). In conclusion, university students generally have a negative outlook on health-related issues, such as eating cultured meat as an alternative. 展开更多

Tilapia is a freshwater fish group with a sustainable prospect but suffers off-notes appearing during cooking processes.To promote pleasant odorants by thermal cooking processes,tilapia fillets were cooked in different ways(roasting,microwave-heating,boiling and steaming).Their aroma profiles were analysed with special focus on off-notes and umami-enhancing odorants by principal component analysis,and correlated with the heating time,colour,moisture and water activity by partial least squares regression analysis.Results showed that the“green”and“earthy”off-notes were highly correlated with the boiling process(excess of water,short heating time),while most of the umami-enhancing odorants had a high association with the roasting process(low water content,long heating time,better Maillard reaction).This study indicated that roasting is the most adapted cooking process promoting Maillard-derived aromas,umami-enhancing aromas and meanwhile,reducing off-notes.This research helps in understanding the off-note generation in tilapia and promoting desirable umami-enhancing odorants. 展开更多

The effect of caloric restriction on genetical pathways

Energy restriction is defined as reducing nutrient intake without dragging the organism into malnutrition. Energy restriction is preferred because it is a non-genetic intervention that increases life expectancy. Nicotinamide adenine dinucleotide(NAD~+)and adenosine monophosphate(AMP)levels, which are the indicators of intracellular energy deficiency, increase with energy restriction. The increase in NAD~+ level stimulates sirtuin(SIRT)enzymes, and the increase in AMP level stimulates AMP-activated protein kinase(AMPK). Various mechanisms are regulated by stimulating these enzymes. By Forkhead box O(FoxO)transcription factors, the ability of resistance to oxidative stress increases, and antioxidant genes, DNA repair, and autophagy genes are stimulated. Apoptosis is induced by stimulation of the p53 protein, and tumor growth is suppressed by the disruption of aging cells. The suppression of phosphoinositide 3-kinase(PI3K)-/-Akt, and therefore mTOR signal stimulates autophagy and mitophagia, and cleanses damaged cells and organelles. Mitochondrial biogenesis is stimulated, antioxidant capacity increases, and inflammatory response decreases. Adipose tissue and lipid metabolism are regulated by the regulation of fatty acid synthesis and oxidation. As a consequence, the effects of caloric restriction on cellular metabolism are regulated through the genetic pathways. 展开更多

Patients with inflammatory bowel disease(IBD)require lifelong and personalized care by a multidisciplinary healthcare team.However,the traditional medical model is not ideal for patients who require continuous close monitoring and whose symptoms may dramatically worsen between regularly scheduled visits.Additionally,close dietary follow-up and monitoring of IBD in a traditional setting are challenging because of the disease complexity,high pressure on outpatient clinics with a small number of IBD specialist dietitians,and rising incidence.Given the significant burden of IBD,there is a need to develop effective dietary management strategies.The coronavirus disease 2019 pandemic caused an unprecedented shift from in-person care to delivering health care via technological remote devices.Traditional nutrition therapy and consultation can be provided by telenutrition through remote electronic communication applications that could greatly benefit patient care.Telenutrition might be useful,safe,and cost-effective compared with standard care.It is likely that virtual care for chronic diseases including IBD will continue in some form into the future.This review article summarizes the evidence about telenutrition applications in the management of IBD patients,and we gave an overview of the acceptance and impact of these interventions on health outcomes. 展开更多

Pasture-finishing of bison improves animal metabolic health and potential health-promoting compounds in meat

Background With rising concerns regarding the effects of red meat on human and environmental health,a growing number of livestock producers are exploring ways to improve production systems.A promising avenue includes agro-ecological practices such as rotational grazing of locally adapted ruminants.Additionally,growing consumer interest in pasture-finished meat(i.e.,grass-fed)has raised questions about its nutritional composition.Thus,the goal of this study was to determine the impact of two common finishing systems in North American bison—pasture-finished or pen-finished on concentrates for 146 d—on metabolomic,lipidomic,and fatty acid profiles of striploins(M.longissimus lumborum).Results Six hundred and seventy-one(671)out of 1570 profiled compounds(43%)differed between pasture-and penfinished conditions(n=20 animals per group)(all,P<0.05).Relative to pasture-finished animals,the muscle of pen-finished animals displayed elevated glucose metabolites(~1.6-fold),triglycerides(~2-fold),markers of oxidative stress(~1.5-fold),and proteolysis(~1.2-fold).In contrast,pasture-finished animals displayed improved mitochondrial(~1.3-fold higher levels of various Krebs cycle metabolites)and carnitine metabolism(~3-fold higher levels of long-chain acyl carnitines)(all P<0.05).Pasture-finishing also concentrated higher levels of phenolics(~2.3-fold),alpha-tocopherol(~5.8-fold),carotene(~2.0-fold),and very long-chain fatty acids(~1.3-fold)in their meat,while having lower levels of a common advanced lipoxidation(4-hydroxy-nonenal-glutathione;~2-fold)and glycation end-product(N6-carboxymethyllysine;~1.7-fold)(all P<0.05).In contrast,vitamins B5,B6,and C,gamma/beta-tocopherol,and three phenolics commonly found in alfalfa were~2.5-fold higher in pen-finished animals(all P<0.05);suggesting some concentrate feeding,or grazing plants rich in those compounds,may be beneficial.Conclusions Pasture-finishing(i.e.,grass-fed)broadly improves bison metabolic health and accumulates additional potential health-promoting compounds in their meat compared to concentrate finishing in confinement(i.e.,pen-finished).Our data,however,does not indicate that meat from pen-finished bison is therefore unhealthy.The studied bison meat—irrespective of finishing practice—contained favorable omega 6:3 ratios(<3.2),and amino acid and vitamin profiles.Our study represents one of the deepest meat profiling studies to date(>1500 unique compounds),having revealed previously unrecognized differences in animal metabolic health and nutritional composition because of finishing mode.Whether observed nutritional differences have an appreciable effect on human health remains to be determined. 展开更多

Prevalence and Predictors of Double Burden of Malnutrition within Households in Africa: A Systematic Review

In recent years, there has been growing interest in the emergence of double burden of malnutrition (DBM) in Africa. In this study, we reviewed the literature on double burden of malnutrition in households, reviewing previous studies investigating the prevalence of DBM in Africa and the factors associated with it. To identify relevant studies, we consulted the PubMed and Cochrane electronic databases, using specific search terms. A total of seventeen articles met the eligibility criteria. These articles were published between 2012 and 2022, and their data were collected between 2000 and 2019. Twelve of these studies used secondary data, including demographic and health surveys. The age of children and adults varied from study to study. All studies used Body Mass Index as a nutritional indicator for adults. For children, the height-for-age Z-score was most commonly used, while weight-for-age, weight-for-height and Body Mass Index-for-age were less commonly used. The national prevalence of double nutritional burden in households ranged from 1.71% to 38.7%, depending on the country and the year. However, direct comparisons between studies were limited due to differences in combinations of undernutrition, overweight or obesity. Among the factors associated with double nutritional burden within households, the most frequently cited in the selected articles were urban/rural residence, income or socioeconomic status, age of child and mother, household size and mother’s level of education. However, no study assessed physical activity, and very few examined the diet of household members. It is essential to take these different parameters into account when designing and implementing interventions to prevent the DBM in Africa. Community and societal factors will also need to be studied and taken into account in these interventions. 展开更多

This study aimed to evaluate energy and nutritional densities, water, carbon and ecological footprints, cost, of omnivorous and vegan main courses served in a university restaurant in the city of Rio de Janeiro. A cross-sectional, analytical study was conducted with 40 main dish-type preparations, 20 of which are omnivorous and 20 vegans, served at lunch, to assess energy and nutritional densities, carbon, water and ecological footprints and cost of preparations. We propose a healthy and sustainable preparation index (HSPI) to evaluate from the list, the best preparation options considering the nutritional quality combined with the impact that the food causes on the environment. Preparations with the highest HSPI were considered the best options because they have a good relation between the nutritional profile and the environmental impact. Results: Regarding energy (ED), nutritional (ND) densities and water, carbon and ecological footprints, omnivorous preparations presented much higher values when compared to the vegan ones. The omnivorous preparations had the highest average cost (R$ 3.44). Regarding the HSPI, vegan preparations showed better rates than omnivorous preparations. Food services should promote healthy and sustainable choices by offering menus with low energy density preparations, high nutritional density, and low environmental impact, considering local realities and customer needs. Conclusion: This study was able to evaluate the best preparation options, considering the nutritional profile and the food impact on the environment, using health and sustainable indicators. Obtaining indicators of preparations regarding healthiness and sustainability, in practice, translates environmental aspects in menu planning, which contribute to changes in food consumption patterns in food services, in addition to contributing to the reduction of the environmental impact. In this way, they can be used as tools added to the menu planning process for the analysis of the environmental impact of menus, in addition to nutritional and qualitative aspects. 展开更多

Non-alcoholic fatty liver disease(NAFLD)is a global problem.It may be caused by metabolic and hormonal disorders,including hypothyroidism.However,non-thyroid causes of NAFLD in people with hypothyroidism,including improper eating behavior and low physical activity,should be acknowledged.This study aimed to present the current literature on whether the development of NAFLD is related to hypothyroidism or a typical consequence of an unhealthy lifestyle in people with hypothyroidism.The results of previous studies do not allow for an unequivocal determination of the pathogenetic relationship between hypothyroidism and NAFLD.Important non-thyroid-initiating factors include providing too many calories in relation to requirements,consuming excessive amounts of monosaccharides and saturated fats,being overweight,and maintaining low physical activity levels.The recommended nutritional model for both hypothyroidism and NAFLD may be the Mediterranean diet,which is rich in fruits and vegetables,polyunsaturated fatty acids,and vitamin E. 展开更多

The usual analytical methods allowed the determination of the nutritional value of the fruit pulp of Annona muricata L. The water content was measured by the method of loss of mass on drying. The total amount of ash was determined by incineration in the oven at 550°C. The mineral elements were determined by inductively coupled plasma spectrometry (ICP0). The determination of acute toxicity was carried out on 25 female mice of the NMRI SUISSE species according to OECD 425 guidelines. For 100 grams of fresh material from the fruit pulp, we noted a very high water content of 84% ± 6%. We also note a particularly high amount of carbohydrates with a rate of 12.2% ± 2%. Protein and lipid content were relatively low at 1% ± 0.01% and 0.7% ± 0.3% respectively. The dietary fiber content was 0.8% ± 0.2%. An energy value of 49.3 Kcal per 100 grams of pulp was determined. The LD 50 obtained was 3320 mg/kg, indicating slight toxicity of soursop seeds. The results of this study show that the white pulp of the fruit of Annona muricata L. consumed in Kinshasa is rich in carbohydrates when we compare it to others biomolecules. It also contains dietary fiber and mineral salts making soursop an excellent constituent of a weight loss diet with a low energy intake. 展开更多

High salt and fat diets are known to have negative impacts on food intake (FI), body weight (BW), body composition (BC), glucose metabolism, and blood pressure. These factors have been studied as separate entities, but the main and interactive effects of dietary salt and fat received little study. The objective of this study was to examine the effect of sodium and fat content of the diet on FI, BW, and BC in male Wistar rats. Male Wistar Rats (n = 48) were allocated into 4 groups (n = 12) and received the following diets: 1. Normal sodium normal fat, 2. Normal sodium high fat, 3. High sodium normal fat, and 4. High sodium high-fat diet for 12 weeks. BW and FI were measured weekly. BC and organs’ weight were recorded post-termination. Regardless of sodium content, a greater FI was observed in normal-fat diet groups compared with high-fat diet groups. However, higher BW and fat (%) were observed in high-fat diet groups. Fasting blood glucose was higher in rats fed normal fat diets compared with those fed high-fat diets. Systolic and diastolic blood pressure was lower in rats fed either high fat, high salt, or normal fat, normal salt diet. In conclusion, fat but not salt content in the diet is a determining factor in the regulation of FI and body weight. Moreover, glucose metabolism can be influenced by both the fat and salt content of the diet. 展开更多

BACKGROUND Time-restricted eating(TRE)is a dietary approach that limits eating to a set number of hours per day.Human studies on the effects of TRE intervention on cardiometabolic health have been contradictory.Heterogeneity in subjects and TRE interventions have led to inconsistency in results.Furthermore,the impact of the duration of eating/fasting in the TRE approach has yet to be fully explored.AIM To analyze the existing literature on the effects of TRE with different eating durations on anthropometrics and cardiometabolic health markers in adults with excessive weight and obesity-related metabolic diseases.METHODS We reviewed a series of prominent scientific databases,including Medline,Scopus,Web of Science,Academic Search Complete,and Cochrane Library articles to identify published clinical trials on daily TRE in adults with excessive weight and obesity-related metabolic diseases.Randomized controlled trials were assessed for methodological rigor and risk of bias using version 2 of the Cochrane risk-of-bias tool for randomized trials(RoB-2).Outcomes of interest include body weight,waist circumference,fat mass,lean body mass,fasting glucose,insulin,HbA1c,homeostasis model assessment for insulin resistance(HOMA-IR),lipid profiles,C-reactive protein,blood pressure,and heart rate.RESULTS Fifteen studies were included in our systematic review.TRE significantly reduces body weight,waist circumference,fat mass,lean body mass,blood glucose,insulin,and triglyceride.However,no significant changes were observed in HbA1c,HOMA-IR,total cholesterol,low-density lipoprotein cholesterol,high-density lipoprotein cholesterol,heart rate,systolic and diastolic blood pressure.Furthermore,subgroup analyses based on the duration of the eating window revealed significant variation in the effects of TRE intervention depending on the length of the eating window.CONCLUSION TRE is a promising chrononutrition-based dietary approach for improving anthropometric and cardiometabolic health.However,further clinical trials are needed to determine the optimal eating duration in TRE intervention for cardiovascular disease prevention. 展开更多

In order not to damage the protein and bioactive content, an efficient method should be employed for their purifications. As such, three-phase partitioning (TPP) was used to purify protease from moringa (Moringa oleifera). TPP is an emerging, promising, non-chromatographic and economical technology which is simple, quick, efficient and often one-step process for the separation and purification of bioactive molecules from natural sources. It involves the addition of salt (ammonium sulphate) to the crude extract followed by the addition of an organic solvent (butanol). The protein appears as an interfacial precipitate between upper organic solvent and lower aqueous phases. The various conditions such as ammonium sulphate, ratio of crude extract to t-butanol and pH which are required for attaining efficient purification of the protease fractions were optimized. Under optimized conditions, it was seen that, 35% of ammonium sulphate saturation with 1:0.75 ratio of crude extract to t-butanol at pH 7 gave 4.94-fold purification with 96.20% activity yield of protease in the middle phase of the TPP system. The purified enzyme from Moringa oleifera has no antimicrobial effect on the pathogenic bacteria tested. However, this purified enzyme, can be considered as a promising agent, cheap, and safe source which is suitable for using in various industries. 展开更多

The incidence rate of breast cancer is the second highest of all cancers.Alterations to one's epigenome are among the most critical factors in breast cancer control.In breast cancer,nutrients can influence epigenetic pathways and homocysteine(Hcy)levels.Hcy has been related to cognitive decline,Alzheimer's disease,and cancer.Similar to how altered Hcy metabolism is strongly influenced by genetic,epigenetic,and environmental factors,it is significantly linked to cancer.This review aims to discuss the relationship between the levels of Hcy in breast cancer and the effects of nutrients on epigenetic processes.Dietary interventions have the ability to control epigenetic processes,and the Hcy levels are associated with both epigenetic mechanisms and nutritional supplements in breast cancer.Certain nutrients have been discovered to have an impact on these processes.Altered Hcy metabolism is influenced by genetic,epigenetic,and environmental factors and has a substantial link to the emergence of cancer.Nutrients,such as folic acid,vitamin B12 and many phytonutrients that have been found to affect the epigenetic processes in breast cancer may alter DNA methylation and histone modification,which in turn may affect how cancer cells behave.The review emphasizes the need for additional studies to fully comprehend nutrition's potential for the epigenetic mechanism and the relation between Hcy metabolism in breast cancer. 展开更多

Storage stability of vitamin C fortified purple mashed potatoes processed with microwave-assisted thermal sterilization system

Quality changes in ready-to-eat,shelf-stable foods,during storage can be influenced by many factors,such as processing,storage conditions,and the barrier properties of the packaging.This research investigated retention of vitamin C and anthocyanin in purple mashed potatoes as influenced by packaging barrier properties and encapsulation during storage after microwave assisted thermal sterilization.Purple mashed potatoes fortified with encapsulated(EVC)or non-encapsulated vitamin C(NVC)were packaged in two high-barrier polymer pouches(TLMO and PAA),processed with a pilot-scale microwave assisted thermal sterilization(MATS)system(F0=10.7 min),and stored at 37.8°C for 7 months.MATS processing caused a significant increase(P<0.05)in the oxygen transmission rates(OTRs)of PAA pouches but did not affect the barrier properties of TLMO pouches.PAA film also had a significantly higher(P<0.05)water vapor transmission rate(WVTRs)than TLMO films,which resulted in a significantly higher(P<0.05)weight loss in the samples packaged in PAA pouches than TLMO pouches.Purple mashed potatoes containing encapsulated vitamin C in both TLMO and PAA pouches showed the highest retention over 2 months of storage at 37.8°C than non-encapsulated vitamin C.Additionally,purple mashed potatoes exposed to 700 lumens light showed a significantly higher(P<0.05)deterioration in the anthocyanin,total phenolic content,color,and vitamin C.Overall,MATS processed purple mashed potatoes in high barrier polymeric packaging can minimize the quality changes when stored in dark conditions during storage and have an extended shelf life. 展开更多
